Chicken with Rosemary and Mushroom Glaze

Season chicken with sea salt and black pepper
- 4 boneless, skinless chicken thighs (4-6 oz each)
- sea salt and freshly ground black pepper to taste
- 4 Tbs coconut oil, divided
- 2 cloves garlic, minced

To a large pot over medium heat, add the olive oil
- 1 tablespoon olive oil
- 1 pound italian sausage

- 3 ounces fettuccine
- 1 tablespoon unsalted butter
- 1/2 shallot, thinly sliced
- Salt, to taste
- Freshly ground black pepper
- 3-4 tablespoons heavy cream
- 1/4 cup frozen peas, thawed
- 1-2 slices prosciutto, cut into 1-inch slices
- 1-2 ounces Parmigiano-Reggiano, finely grated, plus extra for serving

Heat the olive oil in a heavy bottomed stew pot over medium high heat and brown the lamb on all sides
- Oven to 325
- 1 lb lamb, cut in bite sized pieces
- 1 to 2 Tbsp olive oil
- 1 large onion, peeled, halved and thickly sliced
- 3 cups beef stock
- 1/2 bottle of beer or ale
- 1 Tbsp Worcestershire sauce
- 2 bay leaves
- salt and fresh pepper
- 2 or 3 parsnips, peeled and sliced
- 3 or 4 small or 2 large carrots, peeled and sliced
- 4 red skinned potatoes, peeled, halved and thickly sliced
