Grilled Peppery Rib-Eye Steaks with Roquefort Butter

To make the Roquefort butter, in a small food processor, combine the cheese, butter, cognac and ground pepper
- For the Roquefort butter:
- 2 oz. Roquefort, Gorgonzola or other
- blue-veined cheese
- 4 Tbs. (1/2 stick) unsalted butter, at room
- temperature
- 1/2 Tbs. cognac (optional)
- 1/2 tsp. freshly ground pepper
- For the steaks:
- 2 tsp. finely minced garlic
- 1 1/2 tsp. coarsely ground pepper
- 2 Tbs. olive oil
- 4 well-marbled rib-eye, porterhouse or New York
- strip steaks, each 8 to 10 oz. and 1 inch thick
Bacon-Wrapped Scallops with Chili Butter

- 1/2 pound Bacon, Cut Into Thirds Or Halves

Goat Cheese Ice Cream with Roasted Red Cherries

Ice cream In a small bowl, mix 2 tablespoons of the milk with the cornstarch to make a slurry
- 2 cups whole milk
- 1 tablespoon plus 1 teaspoon cornstarch or tapioca starch
- 1/2 cup (4 ounces) fresh goat cheese
- 1 1/2 ounces (3 tablespoons) cream cheese, softened (Microwave for 15 seconds.)
- 1/4 teaspoon fine sea salt
- 1 1/4 cups heavy cream
- 2/3 cup sugar
- 1/4 cup light corn syrup or tapioca syrup
- Roasted Cherries (recipe below)
- Cherries
- 2 cups pitted fresh or frozen (not thawed) red or black cherries
- 2/3 cup sugar
- 2 teaspoons cornstarch
Gnocchi Skillet with Chicken Sausage & Tomatoes

Heat a large pot of salted water to boiling; cook the gnocchi for 2 minutes or according to package directions
- 1 pound gnocchi
- Coarse kosher salt and freshly ground black pepper
- 9 ounces (about 3 links) cooked chicken sausage, sliced into 1/4-inch-thick coins

Slow Cooker Shredded Beef Tacos Recipe

Heat the olive oil in a large, heavy skillet over medium-high heat
- 1-2 Tbsp. extra virgin olive oil
- 2 pounds beef (boneless chuck roast)
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. smoked paprika
- 1 cup beef stock
- 2 Tbsp. tomato paste
- 1 chipotle pepper in adobo sauce, minced (I love spice and used two!)

- PAD THAI SAUCE:
- 4 Tbsp. pad thai paste
- 2 tsp. tamarind paste/concentrate
- 3 Tbsp. fish sauce
- 3 tsp. sugar
- 2/3 cup water
- 2 to 4 tsp. Asian Chilli sauce (preferably Sriracha) or 1 to 2 tsp. Asian Chilli powder or ground red pepper (I used Sriracha)
- PAD THAI NOODLES:
- 8 ounces dried rice noodles (medium thickness)
- 3 Tbsp. high-heat cooking oil (I used vegetable oil)
- 2 eggs, slightly beaten
- 1 lb. peeled, deveined raw shrimp (I used frozen)
- 1 Tbsp. finely minced garlic
- 4 green onions (scallions), cut into 1-inch lengths
- 1 cup fresh bean sprouts
- 1 lime, cut into wedges
