Basil Shrimp Pasta

# Boil water for spaghetti noodles and cook according to package instructions
- 1 pack thin spaghetti noodles, 12oz
- 1 lb shrimp, headless, peeled/deveined
- 12 roma or vine-ripened tomatoes, diced
- 1 bunch Italian basil, leaves and tips only
- 2 TBSP minced garlic
- 1/2 medium yellow onion, diced
- 1 TBSP sugar
- 2 tsp salt, or to taste
- 1/2 tsp black pepper, fresh ground
- 1/4 cup extra virgin olive oil
- crushed red pepper (optional)
PORK WITH GARLIC, ONIONS AND CHILLI

Season the pork with 2 tbsps
- 500 gms. pork meat (shoulder, butt or loin), in thin slices
- 2 tbsps. light soy sauce
- 1 tsp. sesame oil
- 1/2 tsp. salt
- 1 medium egg
- corn flour for dredging
- cooking oil for frying
- 1 small onion
- 2 cloves garlic, sliced
- 2 bunches spring onions
- 1 tbsp. of light soy sauce
- 1 tbsp. of sugar
- 1 tbsp. cooking oil
Italian-American Meatball Sandwiches

Preheat oven to 350°F. Warm rolls in oven, 5 to 10 minutes
- 4 individual-sized Italian-style rolls
- Extra-virgin olive oil, for drizzling
- 1 medium clove garlic, halved
- 1 recipe cooked Juicy and Tender Italian-American Meatballs in Red Sauce, warm
- Pargmigiano-Reggiano, for grating
- 1 pound fresh or low-moisture mozzarella, sliced about 1/4 inch thick
Red-Cooked Pork Belly

1. Put pork belly into a pot and cover with water; bring to a boil
- 2 lbs. boneless skinless pork belly,
- cut into 1 1/2" chunks
- 2 tbsp. peanut oil
- 1 2" piece ginger, cut into "coins"
- 10 scallions, cut into 3" pieces
- 1/4 cup shaoxing jiu (Chinese rice wine)
- 5 tbsp. mushroom-flavored dark soy sauce
- 1 tsp. salt
- 3 tbsp. sugar
Mini Cheesecakes in a Jar

Crust Mix graham cracker crumbs, sugar and butter into a bowl until mixed and crumbly
- Crust
- 1 1/2 cup ground graham crackers
- 1 1/2 tablespoons sugar
- 1 stick (8 tbsp) melted butter
- Filling
- 2/3 cup granulated sugar
- 2- 8 oz packages cream cheese, softened
- 2 large eggs
- 1/4 cup heavy cream
- 1 1/2 teaspoons pure vanilla extract
- 1 tsp lemon zest
BUTTERNUT SQUASH AND BLUE CHEESE RAVIOLI

Preheat oven to 425˚. Slice butternut squash in half and remove seeds
- FILLING
- 1 small butternut squash
- 1 ounce blue cheese
- 1/4 teaspoon sea salt
- 1/2 teaspoon black pepper
- PASTA
- 1 1/2 cups white whole wheat flour or unbleached all-purpose
- 1/4 teaspoon sea salt
- 2 large eggs
- 3 tablespoons water
- SAUCE
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 shallots, sliced
- 5-6 sage leaves, minced
Stir Fried Bok Choy Recipe

Combine everything but the bok choy in a measuring cup
- 3 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 6 cloves garlic, minced
- 3 tablespoons oyster sauce
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil
- t teaspoon sriracha * (Try your asian market. If you can’t find Sriracha substitute another hot sauce )
- 2 tablespoons Chinese cooking wine or sherry
- 2 tablespoons brown sugar

- 2 heads bok choy
- 1 teaspoon peanut oil
Chicken Sausage with Artichokes, inspired by Accomplisht Cook (serves 2)

Grind the meats, eggs, herbs and spices together
- 7 1/2 oz chicken breast
- 3 strips of bacon (4 if you skip the suet)
- 2 T suet
- 1 hard-cooked egg yolk
- 2 T parmesan cheese
- 1/4 t mace
- 1/8 t cloves
- 2 T chopped fresh herbs (sage, rosemary, marjoram, thyme, parsley—what you can find)
- 1/2 t sugar
- 1/2 t salt
- 1/2 t pepper
- 2 T suet, lard or butter
- 2 c chicken broth
- 2 slices of onion, 1/2” thick
- 1/4 t saffron
- 2 T parmesan cheese
- 1 T chopped fresh herbs
- 1 cup gooseberries or currants or grapes
- 4 artichoke hearts, cooked
- 8 navets (small turnips) cooked
- 4 slices of good bread, toasted.

- 1/2 stick butter (4 tablespoons), melted
