Mushroom Cups

Make the wonton cups: Preheat oven to 350 degrees
- 36 wonton wrappers or 1 sheet of puff pastry
- 3 tablespoons unsalted butter
- 1/4 cup minced onion
- 1/2 pound mushrooms, minced
- 2 tablespoons all-purpose flour
- 1 cup half and half
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne
- 1/4 teaspoon black pepper
- 1-1/2 tablespoons finely chopped chives
- 2 tablespoons finely chopped parsley leaves
- 1 tablespoon fresh lemon juice
- 3 tablespoons freshly grated Parmesan
Baked Tomatoes with Goat Cheese Fondue

Preheat oven to 500 degrees
- 2 to 3 large firm tomatoes, or 4 to 6 small firm ones
- Kosher salt
- 3 Tablespoons mascarpone
- 3 Tablespoons goat cheese, at room temperature
- 1 Tablespoon unsalted butter
- 1 Tablespoon extra virgin olive oil
- 2 garlic cloves, finely chopped
- 2 anchovies, finely chopped
- 1/4 cup panko or other coarse bread crumbs
- Freshly ground black pepper, to taste
Tacos

The original recipe includes frying the tortillas to make the taco shells, and has a how-to video
- Taco Potion #19:
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 teaspoons cornstarch
- 2 teaspoons kosher salt (eliminate this salt; reviews say it's too salty, and the seasoned beef is enough)
- 1-1/2 teaspoons hot smoked paprika
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- Put all of the ingredients in a small jar and shake to combine. Store in an airtight container for up to 1 month.
- Yield: 1/4 cup plus 2 tablespoons

Jo Mama's Spaghetti Sauce

Delicious! We added mushrooms, of course
- 2 lbs Italian sausage, casings removed (mild or hot)
- 1 small onion, chopped (optional)
- 3 -4 garlic cloves, minced
- 1 (28 ounce) can diced tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (15 ounce) cans tomato sauce
- 2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
- 3 teaspoons basil
- 2 teaspoons dried parsley flakes
- 1-1/2 teaspoons brown sugar
- 1/2 to 1 teaspoon salt
- 1/4-1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon fresh coarse ground black pepper
- 1/4 cup red wine (a good Cabernet!)
- 1 lb thin spaghetti
