Roasted New Potatoes with Red Onions

Preheat oven to 425ºF. Scrub the potatoes under cold running water and pat dry
- 1 lb small red potatoes, unpeeled
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 large red onion, coarsely chopped
- 3/8 cup chicken stock
- 1 tablespoon fresh parsley, chopped
Whiskey Sour Mix

- 1/3 cup fresh lemon juice (from 3 lemons)

- 1 pound medium to large shrimp, peeled & deveined

- 1 container (6 oz) Light Key lime pie yogurt (Yoplait)

Welsh Rarebit

- A knob of butter (about the size of a walnut, maybe 2 Tblsp)
- 1 tablespoon flour
- 1 teaspoon English mustard

- 2/3 cup (135 grams) granulated or light brown sugar
- 1 sheet all-butter puff pastry, about 8 ounces (store-bought is fine)
