Roger’s Fruit Stuffing

Toast bread & cube. Use as many raisins & as much apple as you like
- 1 1/2 lb. loaf bread cubed
- raisins plumped
- apples, cubed finely
- salt
- pepper
- 1 tsp. poultry seasoning
- chicken broth
Date Filling

1. Cook over medium heat until mixture thickens to spreading consistency (like jam)
- 2 cups chopped dates
- 2/3 cup sugar
- 1/2 tsp salt
- 1 cup water
- 1 tbsp lemon juice
- 1 tbsp lemon zest
- 1/2 cup chopped nuts
Mini German Pancakes

Preheat oven to 400 degrees
- 1 cup milk
- 6 eggs
- 1 cup (all-purpose) flour
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1/4 cup butter, melted
Blueberry-Lemon Tart

Preheat oven to 350 degrees F (175 degrees C)
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 1 egg
- 1 1/4 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 (8 ounce) package cream cheese
- 1/2 cup white sugar
- 2 teaspoons vanilla extract
- 1 can (21 oz) more fruit blueberry pie filling
- 1 cup fresh blueberries
Raisin Sauce

Cover raisins with 1 c. water & cook until done
- 1 1/2 c. cold water (divided)
- 1 c. raisins (more if desired)
- 1/2 c. sugar
- 1/2 c. brown sugar
- 1 T. butter
- 2 T. lemon juice
- 1/2 tsp. grated lemon peel
- 3 T. cornstarch
Waldorf Salad

Sprinkle apple cubes with sugar, lemon juice & salt
- 2 c. diced tart apples
- 1 Tbsp. sugar
- 1/2 tsp. lemon juice
- dash of salt
- 1 c. 1-inch julienne celery sticks
- 1/2 c. broken California walnuts
- 1/4 c. mayonnaise
- 1/2 c. whipping cream, whipped
Spicy Chicken Filet Sandwich

Preheat 6-8 c. of oil in deep fryer to 350°
- 1/3 c. Frank’s Original Red Hot Pepper
- Sauce
- 2/3 c. water
- 1 c. all-purpose flour
- 2 1/2 tsp. salt
- 2 tsp. cayenne pepper
- 1 tsp. coarse-ground black pepper
- 1 tsp. onion powder
- 1/2 tsp. paprika
- 1/8 tsp. garlic powder
- 4 chicken fillets & buns
- Mayo, lettuce (& tomato if desired)
CrockPot Chicken Tortilla Soup

Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot and stir to mix
- 2 chicken boneless skinless chicken breasts
- 2 cans Ro-Tel (I like the lime & cilantro, but the regular is fine)
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn
- 1 onion, chopped
- 2 cans low-sodium chicken broth
- 1-2 cups of water
- 1 Tbsp garlic powder*
- 1 Tbsp chile powder*
- 1 Tbsp ground cumin*
- 1 Tbsp dried cilantro*
- tortilla chips
- sour cream
- shredded cheddar or Mexican blend cheese
- Instead of these spices, you could include a packet of Taco seasoning*
