Asian Chicken Noodle Soup

- 1 tbsp vegetable oil
- 1 tbsp bottled minced garlic
- 1 tbsp bottled grated ginger
- 2 stalks fresh lemongrass, peeled
- 2 cups water
- 2 (14-oz.) cans fat-free, less-sodium chicken broth
- 1 lb. chicken breast tenders, cut into bite-sized pieces
- 4 oz. uncooked angel hair pasta
- 1/4 cup chopped fresh cilantro
- 1 tbsp fresh lime juice
- 1/2 tsp salt
- 2 green onions, thinly sliced
- 1 red chili pepper, finely chopped (or chili pepper sauce, 1-2 tsp)
Coconut Whoopie Pies

Position racks in the upper and lower thirds of the oven and preheat to 375 degrees
- 2 1/2 cups sweetened shredded coconut
- 2 cups flour
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 3/4 sticks butter, at room temperature
- 3/4 cup sugar
- 1 whole egg, plus 1 egg white
- 2 teaspoons pure vanilla extract
- 1 1/4 cups coconut milk (from a 13.5-oz. can)
- 3 1/2 cups confectioners' sugar
- 3/4 cup unsweetened cocoa powder
Avocado Chicken Salad

I added low fat olive oil mayo to make this creamier and was yummy!
- 2 or 3 boneless, skinless chicken breasts
- 1 avocado
- 1/4 chopped onion
- juice of 1/2 a lime
- 2 Tbsp cilantro
- salt and pepper to taste.

1. Preheat oven to 350°. Combine first 3 ingredients in a medium bowl
- 2 cups graham cracker crumbs
- 1/3 cup melted butter
- 3 tablespoons sugar
- 1 cup chopped pecans
- 1 cup semisweet chocolate morsels
- 2/3 cup sweetened flaked coconut
- 1 (14-oz.) can sweetened condensed milk
Italian Three-Bean Salad

In a large, deep skillet, bring a few inches of water to a boil
- Salt
- 12 ounces (1 package) trimmed green beans or haricots verts (thin green beans)
- 1 can (15 to 15.5 oz.) chickpeas, rinsed
- 1 can (15 to 15.5 oz.) cannellini beans, rinsed
- 1 pint cherry tomatoes, halved
- 1 cup (loosely packed) mixed torn fresh basil and flat-leaf parsley leaves
- 1 small white or red onion, chopped
- 2 ribs celery with leafy tops, chopped
- 8 bocconcini (bite-size mozzarella balls), quartered
- 4 slices (1/8 inch thick) prosciutto di Parma, diced
- Italian Dressing
- 2 About 2 tbsp. white balsamic vinegar
- 2 tablespoons grated Parmigiano- Reggiano or Pecorino Romano
- 1 small shallot, grated
- 1 tablespoon Dijon mustard
- 2 teaspoons acacia or other mild honey
- 1 large clove garlic, grated
- 1/2 red finger, Fresno or jalapeno chile, grated or finely chopped
- 1 scant tsp. dried oregano
- 1/2 teaspoon fennel pollen or ground fennel seed

- 8 ounces carrots, cut into 1-inch pieces (about 2 cups)
- 2 1/2 cups chicken broth
- 3 tablespoons butter
- 1 medium onion, chopped
- 2 cups uncooked orzo pasta
- 2 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup freshly grated Parmesan cheese
- 3 tablespoons chopped fresh chives
- 1 teaspoon chopped fresh thyme
