Brown Sugar Cinnamon Peach Pie

Use store bought pie crust to cut down on time
- 1 1/3 cups cold butter
- 4 1/4 cups all-purpose flour, divided
- 1 1/2 teaspoons salt
- 1/2 to 3/4 cup ice-cold water
- 8 large fresh, firm, ripe peaches (about 4 lb.)
- 1/2 cup firmly packed light brown sugar
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 1/2 tablespoons butter, cut into pieces
- 1 large egg, beaten
- 1 1/2 tablespoons granulated sugar
Penne alla Senese

Bring a large pot of water to a boil for the pasta
- 1/2 tablespoon olive oil
- 2 tablespoons butter
- 1 pound good-quality fresh Italian sweet sausage, casings removed
- 1 cup good-quality walnut halves, chopped
- 2 large shallots, finely chopped
- 2 large cloves garlic, finely chopped
- 1/4 pound sliced prosciutto di Parma or another prosciutto crudo, finely chopped
- 2 tablespoons finely chopped rosemary
- 1/4 cup brandy or vin santo (Tuscan fortified wine)
- 1 cup heavy cream
- 2 tablespoons sage, thinly sliced
- Salt
- 1 pound penne rigate (with ridges)
- 1 cup (4 oz.) grated Parmigiano-Reggiano cheese, plus more for serving
Chili's Honey Lime Dressing

This Honey Lime Dressing tastes just like the one served on Chili's grilled caribbean salad, it's sooo good!
- 1/4 cup Grey Poupon Dijon mustard
- 1/4 cup honey
- 1 1/2 teaspoon sugar
- 1 teaspoon sesame oil
- 1 1/2 teaspoon apple cider vinegar
- 1 1/2 teaspoon lime juice
Baked Chocolate Mousse

- 1/3 cup Dutch process cocoa
- 1 teaspoon instant espresso granules
- 4 ounces bittersweet chocolate, finely chopped
- 1 ounce unsweetened chocolate, finely chopped
- 1 tablespoon brandy
- 1/2 teaspoon vanilla extract
- 2 large eggs
- 2 large egg whites
- 1/3 cup sugar
- Dash of salt
- 1 1/2 cups frozen reduced-calorie whipped topping, thawed
- Baking spray with flour (such as Baker's Joy)

Preheat oven to 400°F. Grease a 9 x 13-inch baking dish with cooking spray; set aside
- 3 tablespoons butter
- 1 small white or yellow onion, peeled and thinly sliced
- 4 large garlic cloves, minced
- 1 /4 cup all-purpose flour
- 1 cup chicken stock or vegetable stock
- 2 cups milk (I recommend 2% or whole milk)
- 1 1/2 teaspoons Kosher salt
- 1 /2 teaspoon black pepper
- 2 teaspoons fresh thyme leaves, divided
- 4 pounds Yukon Gold Potatoes, sliced into 1/8-inch rounds
- 2 cups freshly-grated sharp cheddar cheese*, divided (feel free to add more cheese if you’d like)
