Strawberry Pizza

This is a staple at all family celebrations at Hank and Kathy's farm
- 2 cups flour
- 2 sticks margarine (Blue Bonnet)
- 1/2 cup powdered sugar
- 8 oz. cream cheese, softened
- 8 oz. cool whip, defrosted
- 1 cup powdered sugar
- 1 quart strawberries, washed, dried, hulled and sliced thin
- 1 package strawberry glaze. (I usually use Marzetti's in a tub. But, if you can find it in a bag, that is best!)
Vegetarian Potstickers

These are very good and easy to make
- Filling:
- 1/2 cup water chestnuts, sliced thin
- 1/2 cup cabbage, shredded
- 1/4 cup carrots, shredded
- 1/4 cup green onion
- 2 tablespoons red bell peppers, finely chopped
- 1 large egg, lightly beaten
- 1 teaspoon garlic, finely minced
- 2 teaspoons ginger root,grated
- 2 teaspoons tomato paste
- 1 teaspoon dijon mustard
- 2 teaspoons Worcestershire sauce
- 1 teaspoon brown sugar
- 1/2 teaspoon black pepper, freshly ground
- 1/4 teaspoon cayenne pepper
- 40 small wonton wrappers
- water, for sealing wrappers
- 3 tablespoons olive oil, for frying
- 1 tablespoon chili oil
- 1 1/3 cups vegetable stock
- Sauce:
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon chili oil

- 2 cups boiling water
- 1- 6 oz. package Raspberry Jello
- 1 1/3 cups sour cream
- 2/3 cup jellied cranberry sauce
Quick-Fried Shrimp with Sweet Toasty Garlic

Mojo de ajo, or "bath of slow-cooked garlic," is one of Mexicos favorite dressings for seafood
- For the mojo de ajo:
- 1/2 cup coarsely chopped garlic (about 2
- large heads)
- 1 cup extra-virgin olive oil
- 1/2 tsp. salt, plus more, to taste
- Juice of 1 lime
- 2 canned chipotle chilies en adobo, seeded and
- cut into thin strips
- 2 lb. medium-large shrimp, peeled and
- deveined
- Salt, to taste
- 3 Tbs. chopped fresh cilantro or flat-leaf parsley
- 2 limes, cut into wedges

This is Lili's recipe for cole slaw that we had at her house when she make us pulled pork sandwiches on the BBQ
- 1/3 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar
- 1 teaspoon dry mustard
- salt to taste
- 1 1/2 cups green cabbage, chopped
- 1 1/2 cups red cabbage, chopped
- 1/2 cup scallions, chopped
White Chicken Enchilada Casserole

Super easy and delicious enchilada casserole
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups chicken stock
- 1 (4 ounce) can Old El Paso chopped green chiles
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1 cup plain Greek yogurt or sour cream (I use a combination of the two)
- 24 Old El Paso soft flour tortillas, halved
- 2 cups shredded cooked chicken
- 2 (14-ounce) cans White Northern beans, rinsed and drained
- 3 cups shredded Pepper Jack cheese (or Habanero Jack for more heat)
- 1 avocado, peeled, pitted and diced
- 1/4 cup chopped fresh cilantro leaves

- For the marinade:
- 1/2 t baking soda
- 1 t sugar
- 1 T cornstarch
- 1 T low sodium soy sauce
- 1 T water
- 2 T vegetable oil
- 1 1/2 pounds flank steak, thinly sliced
- For the sauce:
- 1/2 cup low sodium soy sauce
- 2 T brown sugar
- 4 cloves garlic, minced
- 2 T flour
- 1 T sherry
- 3 T vegetable oil
- 2 heads of broccoli, heads only
