Broccoli Casserole

1. Preheat oven to 350 degrees F (175 degrees C)
- 40 ounces packages chopped
- broccoli
- 2 (15.25 ounce) cans whole kernel
- corn, drained or fresh asparagus
- 2 large onion, diced
- 2 (16 ounce) containers sour cream
- 2 (10.75 ounce) cans condensed
- cream of broccoli soup
- 4 cups shredded Cheddar cheese,
- divided
- 2 (6 ounce) packages herb-seasoned
- dry bread stuffing mix
- 1 cup butter, melted
Salsa Cheesecake

1 ln a small bowl, beat the cream cheese and Monterey Jack cheese until light and fluffy
- 2 packages 8 ounees each cream cheese,
- softened
- 2 cups 8 ounces shredded Monterey Jack
- cheese
- 2 cups (15 ounces) sour cream divided
- 3 eggs, iightly beaten
- 1 cup salsa
- 1 can 4 ounces chopped green chilies, drained
- Guacamole
- 1 medium tomato, diced
- Tortilla chips or crackers
Hot Crab Dip

Directions Preheat oven to 325 degrees F
- Makes 4 cups
- Ingredients
- 1 pound jumbo lump crabmeat, free of shells
- 1 cup grated pepper jack cheese
- 3/4 cup mayonnaise
- 1/4 cup grated Parmesan
- 1/4 cup green onions, minced, optional
- 5 to 6 roasted garlic cloves or 2 cloves minced
- 3 tablespoons Worcestershire sauce
- 2 tablespoons fresh lemon or lime juice
- 1 teaspoon hot pepper sauce
- 1/2 teaspoon dry mustard
- Salt and pepper
Slow Cooker Chicken Stew with Gnocchi

1.Place the parsnips, carrots, celery, sweet potato and onions in a 5-qt
- 3 med. parsnips, peeled & cut into 1/2" pieces
- 2 lg. carrots, cut into 1/2" slices
- 2 celery ribs, chopped
- 1 lg. sweet potato. peeled & cut into 1" cubes
- 3 grn. onions, chopped
- 3 lbs. bone in chicken breasts
- 1/2 tap. dried sage leaves
- 1/4 tsp salt
- 1/4 tsp pepper
- 4 cups chicken broth
- 1 cup water
- 3 Tbsp cornstarch
- 1/4 cup cold water
- 1 pkg. 16oz potato gnocchi
Summer Cucumber Salad

Mix all ingredients in a large bowl until evenly combined
- 5 large cucumbers, peeled and sliced thin
- 1 large onion, peeled, sliced very thin, and separated into rings
- 3/4 cup milk
- 1/4 cup white vinegar
- 3/4 cup mayo
- 1/4 c sugar
- 1/4 cup fresh chopped dill OR 2 tbspdry dill
- salt n pepper to taste
Chicken and Pastina Soup

Place chicken in 12 inch skillet
- 2 lb. boneless skinlesschicken breasts
- 2 (32 oz.) Chicken broth
- 1 tbsp olive oil
- 1/2 cup chopped onion
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1 cup crushed tomatoes
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1 dried bay leaf
- 1 cup uncooked acini di pepe pasta
- 2 cups chopped, lightly packed spinach
- or swiss chard
- 1/3 cup shredded or shave Parmesan
- cheese
Pickled Shrimp

In a large resealable plastic bag, combine the first 11 ingredients; add the shrimp, onion and bay leaves
- 1/3 cup olive oil
- l/4 cup red wine vinegar
- 1 tablespoon tornato paste
- 1-1/2 teaspoons sugar
- 1-1/2 teaspoons celery seed
- 1 garlic clove, minced
- l/2 teaspoon coarsely ground pepper
- l/4 teaspoon salt
- 1/4 teaspoon ground mustard
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon hot pepper sauce
- 1 pound cooked large shrimp, peeled and
- deveined
- 1 small onion, thinly sliced and separated
- into rings
- 2 bay leaves
3 Cheese Macaroni and Cheese

Preheat oven to 350°F (175°C)
- 16 oz. package small pasta shells
- Salt and ground black pepper to taste
- 1 pinch garlic salt
- 2 Tbsp. butter
- 2 cans (11 oz.) condensed cream of cheddar cheese soup
- 1/2 cup shredded havarti cheese
- 1/2 cup grated parmesan cheese
- 1 cup shredded white cheddar cheese (reserve a 1/4 cup cheese to top casserole)
Nanny's Sausage and Peppers in Mushroom Gravy

Brown sausage in a pan with a bit of olive oil
- 2 lbs Sweet or Hot Italian Sausages, cut into bite size pieces
- 4 Green Peppers sliced
- 1 Large Onion sliced
- 2 cans Mushroom Gravy
- 8 oz Sliced Mushrooms (optional)
Peach Slaw

Whisk yogurt, mayo, onion, vinegar, salt and pepper until well blended
- 1 6oz. container low-fat peach yogurt
- 3 Tbsp light mayo
- 3 Tbsp diced red onion
- 1 1/2 Tbsp apple cider vinegar
- 1/2 tsp salt and pepper
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 2 ripe peaches thinly sliced
