CHICKEN AND CRANBERRY SAUCE

Combine cranberry sauce, orange juice, and cloves; beat or mix well
- 1 can cranberry sauce
- 1 c. orange juice
- 1 tsp. cloves

- 2 cans (1O oz. each) mild diced tomatoes with green chiles,like RoTel
- 2 cups beef stock
- 2 cans (29 oz. each) Mexican-style hominy, rinsed and drained
- Shredded Cheddar cheese
- Sour cream
Turkey-Vegetable Soup

1. ln microwave-safe large bowl, place broth and 1 cup water
- I carton (32 oz.) lower-
- sodium chicken broth
- 1 Tbsp. olive oil
- 1 bulb fennel (14 oz.), trimmed,
- cored, and chopped
- 3 med. carrots, cut into half-moons
- 2 cloves garlic, finely chopped
- I sm. head escarole (7 oz.),
- thinly sliced
- I can (15 to 19 oz.) white kidney

Strawberry Amaretto Cheesecake Dip

1. ln a small bowl, combine strawberries, sugar and amaretto; mix well and set aside
- 1/2 cup crushed hulled strawberries
- 1/4 cup firmly packed dark brown sugar
- 1/4 up amaretto liqueur
- 1 cup sour cream
- 1 (8-ounce) package cream cheese, softened
- 1/4 cup finely chopped walnuts

1. Cook sausage and ground beef in a large pot over medium-high heat until lightly browned and crumbly

- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 2 cloves garlic, minced
- 1 large onion, diced
- 1 (28 ounce) can diced tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (14 ounce) can kidney beans (optional)
- 2 teaspoons minced chipotle peppers in adobo sauce
- 1 teaspoon salt

- 1 cup Onion, diced
- 1 1/2 tsp Lemon, zest

White Bean and Ham Soup

1. Place the beans in a large bowl and pick through them, removing and discarding any broken beans or stones
- 1 pound dried cannellini beans
- 3 1/2 quarts (14 cups) water, plus more for soaking the beans
- 1 meaty smoked ham bone or 2 ham hocks (about 1 pound)
- 3 fresh thyme sprigs or 1/2 teaspoon dried thyme
- 2 medium carrots
- 2 medium celery stalks
- 1 medium yellow onion
- 1 teaspoon kosher salt, plus more as needed
- 1 1/2 cups medium-dice, fully cooked smoked ham (about 8 ounces)
- Freshly ground black pepper
