Peanut Butter Secret Cookies

Combine flour, baking powder, and cinnamon; set aside
- 1 1/4 cup all purpose unbleached flour
- 1 teaspoon baking powder
- 3/4 teaspoon cinnamon
- 1/2 cup butter
- 1 cup firmly packed brown sugar
- 1 cup smooth peanut butter
- 2 large eggs
- 1 teaspoon vanilla
- 24-30 good quality chocolate candies that don't get too hard when cold, Dove Promises work very well
- Powdered sugar for dusting, if desired
Shepherd's Pie with Mushroom Onion Gravy

Preheat oven to 375 degrees F
- Mushroom Onion Gravy:
- 2 pounds russet potatoes, washed, peeled and cut into chunks
- 1 clove garlic, smashed
- Salt
- 6 tablespoons butter
- 1/2 cup heavy cream
- Freshly ground black pepper
- 2 tablespoons vegetable oil
- 1 1/2 pounds ground beef (85 percent lean)
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon cayenne pepper
- 2 tablespoons tomato paste
- 1/2 cup low-sodium beef stock
- 1/2 large onion, finely chopped
- 1 red bell pepper, julienned
- 2 zucchini, julienned
- 2 carrots, peeled and grated
- 1 teaspoon Hungarian hot paprika, plus more for garnish
- 4 ounces Havarti cheese, grated
- 1/2 large onion, chopped
- 8 ounces white button mushrooms, sliced
- 3 tablespoons oil
- 3 tablespoons all-purpose flour
- 1 cup red wine
- 2 cups beef broth
- Salt and freshly ground black pepper
Pineapple Meatballs

In a mixing bowl combine the oats, and milk
- 3/4 c quick oats
- 1/2 c milk
- 1 1/2 pounds lean ground beef (turkey works well too)
- 2 eggs beaten
- 1/4-1/2 c chopped onion
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp pepper
- 2 tsp Worcestershire sauce
- 1 20 oz can pineapple chunks, drained (reserve juice)
- Sauce
- 3/4-1 c pineapple juice
- 1/4 apple cider vinegar
- 1/3 c soy sauce
- 1 tsp Worcestershire sauce
- 1 tsp garlic powder
- 1/4-1/2 cup brown sugar (depends on how sweet you want the sauce)
Egg Rolls

Roll up, try to keep as tight as you can
- Sweet and Sour Sauce :
- One package of egg roll wrappers
- Bag of Shredded cabbage or one small head, cut into fine shreds
- 4 green onions chopped
- 3/4 cups celery chopped
- 1/2 cup shredded carrots ( super fine I use a veggie peeler, to shred them)
- 1 -2 cup cooked sausage
- 2 Tablespoon soy sauce
- 1 large egg (raw)
- 1 small can of crushed pineapple
- 2-3 T Ketchup
- 1/4 c vinegar (white or apple cider)
- 1/3 c brown sugar
- 2 T cornstarch
- 1/4 c water
Asian Chicken (Rachael Ray)

Heat grill or grill pan over medium-high heat
- 4 large cloves garlic, grated or finely chopped
- 1 1/2 inches fresh ginger root, peeled and grated or finely chopped, a couple of tablespoons
- 1/4 cup Tamari or soy sauce
- 3 tablespoons Sriracha chili sauce, eyeball it
- 3 tablespoons rice wine vinegar
- 2 tablespoons sesame oil
- 3 tablespoons agave syrup or honey, eyeball it
- 12 pieces boneless, skinless chicken thighs, trimmed of all fat and connective tissue and cut into pieces about 3-4 inches diameter to fit slider-size rolls
- Salt and pepper
- Canola oil, for drizzling
- 1 bunch scallions, finely chopped
- 1/4 cup sesame seeds, toasted
- 12 brioche dinner rolls or slider rolls, such as Pepperidge Farm brand
- 1/2 seedless cucumber, thinly sliced
Peg's Wholewheat Bread

Included on recipe ingredients
- 4 C very warm water
- 2 T yeast
- 1/3 C honey, drizzle over yeast and water
- Let bubble for 10-15 minutes.
- 1/3 C oil
- 1 1/2 T dough enhancer
- 1 T salt
- Wheat flour until sides of bowl come clean.
- Bake at 350 degrees for 30 minutes.
Hot Corn Dip

- Ingredients:
- Hot Corn Dip
- 1 teaspoon olive oil
- 3-4 ears of fresh corn on the cob (can use frozen if it is out of season)
- 1 red bell pepper, diced
- 1 small can of white hominy (drained)
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup sour cream
- 1 pepper in adobe sauce, chopped
- 1 small can of olives, sliced
- 1 cup imitation crab pieces
- 1 tablespoon fresh cilantro, rough chopped
- 1 cup cheddar cheese, shredded, divided
- 1/4 cup mayonnaise
