Chicken Picata

Pound chicken to 1/2 inch thick
- 4 Boneless chicken breasts
- 1/4 cup flour
- 1 cup fresh sliced mushrooms
- 4 tablespoons margerine
- 2 tablespoons lemon juice
- 1/4 cup chicken broth or dry white wine
- 1 Garlic clove
Romano Turkey Burgers

Turn on broiler. In a bowl, mix all ingredients (except hamburger buns) together welland shape into six patties
- 1 1/2 1 1/2 lbs. ground turkey
- 3/4 cup Roman cheese, grated
- 1/2 cup onions
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 6 whole-wheat hamburger buns
Applesauce Muffins

This works well with Jules GF flour
- 1 stick of butter or margarine
- 1 cup brown sugar
- 1 egg
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 cup applesauce
- 1/2 cup ground pecans
Southwestern Corn

Preheat grill to medium. Clean the corn and boil in a large pot of water for 5 minutes
- 8 ears of corn
- olive oil for brushing the corn
- 3/4 stick unsalted butter (cut into chunks)
- juice of 1 lime
- salt and pepper to taste
Rosti with Gruyere Cheese

Cook bacon in large nonstick skillet over medium-high heat until crisp, about 8 min
- 4 bacon slices, chopped
- 2 cups (packed) shredded & peeled russet potatoes
- 2 tablespoons (1/4 stick) butter
- 1/2 cup grated Gruyère cheese (about 2 ounces)
Banana Oatmeal Muffins

- 1 cup boiling water
- 3 ripe bananas, mashed
- 2 eggs, beaten
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 cup milk
- 3 cups all-purpose flour

- 1/2 teaspoon salt
GFCF Cream of Mushroom Soup

- 1 8oz package fresh mushrooms, chopped
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 1/2 cups unsweetened hemp milk (room temperature)
- 2 teaspoons worcestershire sauce
- 2 tablespoons sweet rice flour
- salt and pepper to taste
Lemon Poppyseed Sandwich Cookies

- OOKIES:
- 2 3/4 2 3/4 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 1/4 1 1/4 cups sugar
- 1 large egg
- 2 tablespoons poppy seeds
- 2 teaspoons grated lemon peel
- 1 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
- FILLING:
- 8 oz. cream cheese, room temp.
- 1/3 cup plus 1 tablespoon sugar
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon lemon extract
