Heat oven to 350. Measure all ingredients into a bowl

  • 2 cups GF flour
  • 2 tsp xanthan gum (don’t skip!)
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 3 1/2 tsp baking powder
  • 1/2 cup shortening (CF margarine also works, may produce a slightly more ‘yellow’ cupcake)
  • 1 cup GFCF milk (we used vanilla almond milk – yum!)
  • 1 tsp GFCF vanilla
  • 3 eggs
  • Frosting
  • 2 cups powdered sugar
  • 1/4 cup CF margarine
  • 1 tsp vanilla
  • splash of milk (sub)
  • 3-4 frozen strawberries, heated in microwave about 40 seconds & then mash

  • 1/4 cup olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced

  • 1 tsp basil
  • 1/4 - 1/2 tsp red pepper flakes
  • 1/4 cup vodka
  • 1 cup half and half (you can use fat free)

  • 1 Tblsp margerine
