Ingredients

  • 1 cup rolled oats
  • 1 cup boiling water
  • 3 ripe bananas, mashed
  • 2 eggs, beaten
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 3 cups all-purpose flour
  • 2 1/2 2 1/2 teaspoons baking soda
  • 1/2 teaspoon salt

Preparation

Step 1

Pour boiling water over the oats in a bowl and set aside to cool. Fork mash bananas and mix in eggs, sugar, oil, and milk. Stir in cooled oats. Combine flour , baking soda, salt and cinnamon. Add to banana mixture. Mix and pour into muffin tin/pan. Bake at 375º for 15-20 minutes, making sure not to burn bottom of muffins.
