- 8 oz. Italian chocolate wafer sandwich cookies, such as quadratini
- 9 oz. Semisweet chocolate, chopped (about 1 1/2 cups), more for garnish
- 1 1/2 tsp. Vanilla extract
- Pinch kosher salt
- 3 3/4 cups heavy cream

Preheat oven to 400 degrees
- olive oil, for brushing
- 3/4 cup instant grits
- 1 cup baby arugula
- 1/4 cup grated cheddar, divided
- salt and pepper

Whisk first 8 ingredients in small bowl for dressing
- Dressing:
- 1 1/4 cups vegetable oil
- 1/3 cup apple cider vinegar
- 3 tablespoons frozen apple juice concentrate, thawed
- 2 tablespoons minced red onion
- 1 3/4 teaspoons salt
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground black pepper
- Salad:
- 1 cup thinly sliced red onion
- 2 Gala apples, peeled, cored, cut into 1/4-inch dice (about 1 pound)
- 5 hearts of romaine lettuce, halved lengthwise
- 3/4 cup pecans, toasted, coarsely chopped
- Feta, optional

- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 cups sugar
- 1 cup vegetable oil
- 4 eggs, lightly beaten
- 1 teaspoon coconut extract
- 1 teaspoon maple extract
- 1 cup buttermilk
- 1 cup shredded coconut

- 2 chicken bouillon cubes
