  • Kosher Salt
  • 1/3 cup Vegetable Oil
  • 3 shallots, sliced thin
  • 4 garlic cloves, peeled and smashed
  • 1 (1-inch) piece ginger, sliced into 1/2-inch-thick rounds and smashed
  • 6 sprigs fresh rosemary
  • 1 tablespoon coriander seeds
  • 3 bay leaves
  • 2 (2-inch) strips lemon zest
  • 1/2 teaspoon red pepper flakes
  • SAUCE
  • 1/3 cup chopped fresh mint
  • 1/3 cup chopped fresh parsley
  • 1 shallot, minced
  • 2 tablespoons lemon juice
  • Salt and pepper

  • GRAHAM CRACKER COATED PIE SHELL
  • 1 1/4 cups Unbleached All-Purpose Flour
  • 1/2 teaspoon table salt
  • 1 tablespoon granulated sugar
  • 6 tablespoons Unsalted Butter, chilled, cut into 1/4-inch pieces
  • 4 tablespoons vegetable shortening, chilled
  • 3 –4 tablespoons ice water
  • 1/2 cup graham cracker crumbs
  • PIE FILLING
  • 1/2 cup sugar
  • 6 tablespoons cornstarch
  • 1/4 teaspoon fine sea salt
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 6 large egg yolks, well beaten
  • 3 tablespoons unsalted butter cut into small bits
  • 1 tablespoon vanilla extract
  • 4 large very ripe but not overripe bananas, cut into 1/4-thick rounds
  • WHIPPED TOPPING
  • 1 cup cold heavy cream
  • 2 teaspoons sugar
  • 1 teaspoon vanilla extract

  • 9 cups water
  • 1 Turkish or 1/2 California bay leaf
  • 1 large white onion, halved lengthwise and thinly sliced
  • 6 garlic cloves, chopped
  • 2 1/2 teaspoons salt
  • 3 lb skinless boneless chicken thighs
  • 1/2 cup hulled (green) pumpkin seeds (not roasted; 2 1/4 ounce)
  • 1 lb tomatillos, husked
  • 2 fresh jalapeño chiles, quartered (including seeds)
  • 3/4 cup chopped fresh cilantro
  • 1 teaspoon dried epazote or oregano (preferably Mexican), crumbled
  • 2 tablespoons vegetable oil
  • 2 (15-oz) cans white hominy, rinsed and drained

  • Garlic cream cheese mixture:
  • 1/2 lb. extra thinly sliced provolone cheese
  • Garlic cream cheese (recipe follows)
  • Basil pesto (1 pre-made container like Contadina will do)
  • 1 can artichoke hearts in water, drained and cut into bite size pieces
  • 1/3 cup sundried tomatoes packed in oil, drained and cut into bite size pieces
  • Toasted baguette, bagel chips, water crackers or JJ Flats (Trader Joes)
  • 16 oz. cream cheese
  • dash of pepper
  • 2 cloves garlic mashed
  • Mix all ingredients together until they reach a creamy, spreadable consistency.
