Meat: Roast Butterflied Leg of Lamb with Coriander and Rosemary

- 1 (6- to 8 pound) butterflied leg of lamb
- Kosher Salt
- 1/3 cup Vegetable Oil
- 3 shallots, sliced thin
- 4 garlic cloves, peeled and smashed
- 1 (1-inch) piece ginger, sliced into 1/2-inch-thick rounds and smashed
- 6 sprigs fresh rosemary
- 1 tablespoon coriander seeds
- 3 bay leaves
- 2 (2-inch) strips lemon zest
- 1/2 teaspoon red pepper flakes
- SAUCE
- 1/3 cup chopped fresh mint
- 1/3 cup chopped fresh parsley
- 1 shallot, minced
- 2 tablespoons lemon juice
- Salt and pepper

- GRAHAM CRACKER COATED PIE SHELL
- 1 1/4 cups Unbleached All-Purpose Flour
- 1/2 teaspoon table salt
- 1 tablespoon granulated sugar
- 6 tablespoons Unsalted Butter, chilled, cut into 1/4-inch pieces
- 4 tablespoons vegetable shortening, chilled
- 3 –4 tablespoons ice water
- 1/2 cup graham cracker crumbs
- PIE FILLING
- 1/2 cup sugar
- 6 tablespoons cornstarch
- 1/4 teaspoon fine sea salt
- 2 cups whole milk
- 1/2 cup heavy cream
- 6 large egg yolks, well beaten
- 3 tablespoons unsalted butter cut into small bits
- 1 tablespoon vanilla extract
- 4 large very ripe but not overripe bananas, cut into 1/4-thick rounds
- WHIPPED TOPPING
- 1 cup cold heavy cream
- 2 teaspoons sugar
- 1 teaspoon vanilla extract

- 1/2 small can diced green chilies

- 1 Turkish or 1/2 California bay leaf
- 1 large white onion, halved lengthwise and thinly sliced
- 6 garlic cloves, chopped
- 2 1/2 teaspoons salt
- 3 lb skinless boneless chicken thighs
- 1/2 cup hulled (green) pumpkin seeds (not roasted; 2 1/4 ounce)
- 1 lb tomatillos, husked
- 2 fresh jalapeño chiles, quartered (including seeds)
- 3/4 cup chopped fresh cilantro
- 1 teaspoon dried epazote or oregano (preferably Mexican), crumbled
- 2 tablespoons vegetable oil
- 2 (15-oz) cans white hominy, rinsed and drained
- Accompaniments: diced radish; cubed avocado tossed with lime juice; shredded romaine; chopped white onion; lime wedges; dried oregano

- 2 tsp. cornstarch
- 1/2 pound ground pork

- 1/2 cup chopped green onions and tops
- 1 8 oz. can water chestnuts, drained and minced
- 1 tbsp. sesame oil
- 1 12 oz. package won ton wrappers
- 1 egg, lightly beaten
- vegetable oil for frying

This recipe was given to me by Anne-Marie Schaffer and is a popular request to bring to parties
- Garlic cream cheese mixture:
- 1/2 lb. extra thinly sliced provolone cheese
- Garlic cream cheese (recipe follows)
- Basil pesto (1 pre-made container like Contadina will do)
- 1 can artichoke hearts in water, drained and cut into bite size pieces
- 1/3 cup sundried tomatoes packed in oil, drained and cut into bite size pieces
- Toasted baguette, bagel chips, water crackers or JJ Flats (Trader Joes)
- 16 oz. cream cheese
- dash of pepper
- 2 cloves garlic mashed
- Mix all ingredients together until they reach a creamy, spreadable consistency.
