Breakfast: Apple Dutch Babies

By far, at the top of my list for breakfast items
- 3 large eggs
- 3/4 cup fat-free or low-fat milk (don't use whole milk)
- 3/4 cup all-purpose flour, sifted
- 1 teaspoon ground cinnamon
- 1/4 teaspoon table salt
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla
- 1 large apple (jonagold, pink lady, gala, etc.), peeled and thinly sliced
- 1 tablespoon granulated sugar
- 4 tablespoons butter, divided
- 1/2 cup sour cream
- 1/4 cup firmly packed light brown sugar
- 1 to 2 Tbsp. apple cider or orange juice
- Garnish: powdered sugar
Appetizer: Cajun Chicken Wings

Prepare the wings: Combine the hot sauce, Cajun seasoning, cayenne and garlic powder in a large bowl and mix well
- Hot Sauce:
- 1 1/2 cups hot sauce
- 1 1/2 tablespoons Cajun seasoning
- 1/2 tablespoon cayenne pepper
- 3/4 tablespoon garlic powder
- 3 pounds chicken wings
- Peanut oil, for frying
- 1 stick salted butter, softened
- 1/2 cup hot sauce
- Asian Sauce:
- 1 cup sweet Asian chili sauce
- 1 tablespoon soy sauce

One of two chocolate chip recipes that I like
- 1 1/2 cups all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 pound (1 stick) unsalted butter, cut into 1/2" pieces
- 1/2 cup sugar
- 3/4 cup tightly packed light brown sugar
- 1 1/2 tsp. vanilla extract
- 1 large egg, at room temperature, lightly beaten
- 7 oz. semisweet chocolate, cut into 1/2" chunks (prefer Nestle Chocolatier)

Flour Bakery's famous recipe
- 9 large eggs
- 3/4 cup/ 180 ml half-and-half
- 3/4 tsp kosher salt
- Pinch of freshly ground black pepper
- 1/2 tsp chopped fresh thyme
- 4 slices sharp Cheddar cheese
- 8 slices thick-cut applewood-smoked bacon, fried to liking
- 1/4 cup/ 60 ml good-quality mayonnaise
- 1/4 cup/ 60 ml Dijon mustard
- 4 good-quality rolls
- 2 cups/ 40 g mesclun greens or other mild lettuce
- 1 ripe tomato, cut into 4 thick slices

Whisk together all the marinade ingredients in a large baking dish
- Marinade:
- 4 pounds short ribs
- 1/2 cup soy sauce
- 1 Korean pear or Asian pear, grated with juices
- 2 tablespoons finely chopped garlic
- 1/2 small white onion, grated or sliced
- 1 tablespoon grated fresh ginger
- 3 tablespoons light brown sugar
- 1 tablespoon honey
- 2 tablespoons sesame seeds, toasted
- 2 tablespoons toasted sesame oil
- 1 tablespoon ground red pepper
- 1/4 teaspoon ground black pepper
- 2 green onions, thinly sliced
- 1 (20-ounce) bottle lemon-lime soda, optional (recommended: Sprite or 7-Up)

- graham cracker crust:
- 1 1/2 cups graham cracker crumbs (about 20 squares)
- 1/3 cup unsalted butter, melted
- 9 ounces bittersweet chocolate, finely chopped
- cake:
- 2 1/4 cup plus 2 tbsp. sugar
- 1 3/4 cup all-purpose flour
- 3/4 cup plus 1 tbsp. cocoa powder (not Dutch-processed)
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp. vanilla extract
- 1 cup boiling water
- 4-5 cups mini marshmallows
- Topping:
- 1 1/3 cups chocolate chips (8 oz)
- 3 tbsp. butter
- 1 cup peanut butter
- 2 cups rice crispy cereal
- 12 x9 pan

Form meat into four flat burger patties
- For the burgers:
- 2 pounds course ground chuck
- 4 mini baguettes
- Salt and pepper
- 4 ounces of arugula
- 4 ounces of gruyere
- 4 ounces maytag blue
- Caramelized onion and apple wood bacon compote
- For the onion compote:
- 3 yellow onions
- Balsamic vinegar
- Chopped bacon
- Minced garlic
- Butter
- Salt and pepper

- 2 cups all-purpose flour
- 1/2 cup plus about 2 tbsp. sugar
- 2 tsp. baking powder
- 2 tsp. grated lemon peel (colored part only)
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup (1/4 pound) butter, cut into chunks
- 2 large egg yolks
- 2/3 cup buttermilk
- 2 quarts strawberries, sliced, sweetened with sugar (if necessary)
