Carrot Cake

Mix carrots and dry ingredients, add oil and blend
- 2 c sugar
- 1 tsp soda
- 1 1/2 c Canola oil
- 1 tsp baking powder
- 4 eggs
- 1 tsp salt
- 3 c grated carrots
- 2 tsp cinnamon
- 2 c flour
- 2 tsp vanilla
TROPICAL CARROT CAKE WITH COCONUT CREAM CHEESE FROSTING

For cake: Preheat oven to 350°F
- Cake
- 2 1/3 cups sifted all purpose flour (sifted, then measured)
- 1 cup sweetened flaked coconut
- 1 cup dry-roasted macadamia nuts
- 3/4 cup chopped crystallized ginger
- 3 1/2 teaspoons ground cinnamon
- 2 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 2 cups finely grated peeled carrots
- 2 8-ounce cans crushed pineapple in its own juice, well drained
- Frosting
- 3 8-ounce packages Philadelphia-brand cream cheese, room temperature
- 3/4 cup (1 1/2 sticks) unsalted butter, room temperature
- 2 cups powdered sugar
- 3/4 cup canned sweetened cream of coconut (such as Coco López)
- 1 teaspoon vanilla extract
- 1/2 teaspoon (scant) coconut extract
- 14 whole dry-roasted macadamia nuts
- 1/4 cup chopped crystallized ginger
Pineapple Chicken Bites

- 20 oz can pineapple tidbits in juice undrained
- 6 oz cream cheese, soften
- 6 oz Hormel chunk breast of chicken, drained and flaked
- 1/4 cup chopped green onion
- 1/2 tsp white pepper
- 2 -10 oz cans of refrigerated flakey biscuits
- Dipping Sauce
- 1/4 honey
- 1 T soy sauce
- 1/2 ground ginger

- 2 cups all-purpose flour
- 1/2 teaspoon nigella seeds (also called kalonji or black onion seeds)
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil, plus 3 to 4 cups for frying
- 3 medium potatoes (about 2 pounds), peeled
- 1 bunch green onions (white and green parts), chopped
- 2 fresh green chiles, such as jalapeños, seeded and minced (optional)
- 1/2 cup fresh cilantro, chopped
- 1 teaspoon whole cumin seeds
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chile powder
- 1/2 teaspoon salt
- Plain yogurt for serving

Mix refried beans and Fritos bean dip; spread in bottom of small rectangular baking dish
- 1 sm. can refried beans
- 1 can Fritos bean dip
- 1 container Dean's guacamole dip
- 1 c. sour cream
- 1/2 c. mayonnaise
- 1 pkg. taco seasoning
- shredded Jack and cheddar cheese
- 1 can sliced black olives
- 3 sm. chopped tomatoes
- 2 bunches chopped green onion

- Ingredients
- 1 10-ounce package frozen chopped spinach, thawed and squeezed dry
- 1/2 cup scallions, minced
- 1/2 cup fresh parsley,chopped
- 1/2 cup fresh dill, minced
- 1/2 cup Feta cheese, crumbled
- 4 ounces cream cheese, softened
- 4 ounces farmer (or cottage) cheese
- 2 tablespoons grated Kefalotyri (or Parmesan) cheese, grated
- 2 eggs
- Salt and pepper to taste
- 40 sheets Athens® Fillo Dough, thawed

Tempura Batter

Beat the egg and mix with water
- Koromo (batter)
- Using cold water (about 40F) is a must. This keeps the batter from becoming sticky. When you add the flour, whisk quickly just to mix it in evenly. Sticky batter results in oily tempura.
- • 1 egg, beaten
- • 1 cup COLD water
- • 2 tablespoons dry white wine
- • 1 cup flour
Tuna and Avocado Tartare with California Caviar on Sesame Wonton Crisps

Serve a chilled crisp California Chardonnay throughout the meal
- Crisps
- 12 wonton wrappers, each cut diagonally in half to form 2 triangles
- Olive oil (for brushing)
- Sesame seeds
- Tartare
- 2 tablespoons soy sauce
- 1 tablespoon unseasoned rice vinegar
- 1 tablespoon fresh lemon juice
- 1 1/2 teaspoons wasabi paste*
- 3/4 teaspoon Asian sesame oil
- 8 ounces sushi-quality ahi tuna steak, cut into 1/3-inch cubes
- 1 medium avocado, halved, pitted, peeled, cut into 1/3-inch cubes
- 1 cup 1/3-inch cubes seeded English hothouse cucumber
- 1 green onion, finely chopped
- Toasted sesame seeds
- Chopped fresh chives
- California caviar (preferably ginger-flavored whitefish roe)
