Seafood Enchiladas

In a mixing bowl stir together soup, onion, nutmeg and black pepper
- 10 oz cream of chicken soup
- 1/2 cup onions; chopped
- 8 oz crab (real or imitation); chopped
- 1 3/4 cup Monterey Jack cheese; shredded
- 8 flour tortillas; 5-6 inch
- 1 cup milk
- dash nutmeg
- dash pepper
Beer Margaritas

Combine beer, tequila, orange liqueur and limeade in large pitcher and stir to blend
- 4 (12oz.) bottles of light-flavored beers, such as Corona
- 1 cup tequila
- 1/2 cup orange liqueur (Grand Marnier)
- 1 cup frozen limeade concentrate, thawed
- Lime wedges
- Kosher salt
Texas Sunshine Cookies

1. Preheat oven to 375 degrees
- 2 1/2 cups sifted all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup solid vegetable shortening
- 1 cup sugar
- 2 eggs
- 1 tablespoon grated orange rind
- 1/2 cup orange juice
- 1/2 cup chopped pecans
- Orange Icing(below)
Jezebel Sauce

Combine all ingredients except cream cheese and bread or crackers in a medium bowl
- 18 oz. jar blackberry jam
- 18 oz. jar raspberry jam
- 1 1/2 oz. dry mustard
- 5 oz. jar prepared horseradish
- 1/4 tsp. cayenne pepper
- 1 tbsp. pepper
- 12 oz. container whipped cream cheese
- toasted bread slices and/or buttery crackers

For the sugar rim: In a small bowl, combine the sugar, salt and orange, lime and lemon zests
- Sugar Rim:
- 1/3 cup granulated sugar
- 1 1/2 tablespoons fine sea salt
- 1 teaspoon orange zest (from 1/4 orange)
- 1 lime, zested and cut in half
- Zest of 1/2 lemon
- Martini:
- 2 ounces chilled lemon vodka
- 2 ounces chilled limoncello
- 2 ounces orange liqueur, such as Cointreau
- 2 ounces fresh lime juice
- 2 ounces fresh orange juice
Spinach and Cheddar Soufflé

Preheat the oven to 400 degrees F
- 3 tablespoons unsalted butter, plus extra for greasing the dish
- 1/4 cup finely grated Parmesan cheese, plus extra for sprinkling
- 3 tablespoons all-purpose flour
- 1 cup scalded milk
- 1/4 teaspoon of nutmeg
- Pinch of cayenne pepper
- Kosher salt and freshly ground black pepper
- 4 extra-large egg yolks, at room-temperature
- 1/2 cup grated aged Cheddar cheese, lightly packed
- 1 package frozen chopped spinach, defrosted and squeezed dry
- 5 extra-large egg whites, at room temperature
- 1/8 teaspoon cream of tartar

- 2 ounces bitter chocolate
- 1/2 cup water
- 14 ounces milk
- 3 tablespoons evaporated milk
- 1/4 cup all-purpose flour
- 11 tablespoons sugar
- 1 large egg, beaten
- Pinch of salt
- 1 teaspoon vanilla extract
- 2 tablespoons margarine
- 1 prepared graham cracker crust
- 1 cup whipping heavy cream, whipped until stiff
Cherry Coconut Rolls (No Raise Dough)

Dissolve yeast and sugar in lukewarm water and let stand
- Filling:
- 1/2 lb. oleo or butter
- 2 pkg. dry yeast
- 1 cup warm water
- 2 tbsp. sugar
- 4 cups flour
- 2 egg yolks
- 1 tsp. salt
- 1 lb. grated coconut
- 1 lb. jar of chopped cherries (reserving some liquid)

- 3 whole eggs
- Ice
- 7 slices thick-cut peppered bacon
- 1 small whole red onion
- 1 package white button mushrooms
- 3 tablespoons red wine vinegar
- 2 teaspoons sugar
- 1/2 teaspoon Dijon mustard
- 1 dash salt
- 8 ounces baby spinach, washed, dried and stems removed
