- 1 1/4 teaspoons baking powder
- 3/4 teaspoon baking soda

- Pinch cayenne pepper
- 3/4 cup plus 1 tablespoon milk
- 1/3 cup vegetable oil
- 2 tablespoons honey
- 3 eggs
- One 6-ounce piece deli ham, finely chopped (about 1 1/4 cups)
- 1 cup shredded gruyere cheese, lightly packed (about 3 ounces)
- 1/2 cup finely diced (about 1/4-inch) havarti or gruyere cheese (about 2 ounces)
- 2 scallions, chopped
Crab Au Gratin

Crumble crackers between waxed paper with a rolling pin
- 8 tablespoons (1 stick) butter
- 1/2 cup onion, minced
- 2 tablespoons all−purpose flour
- 1 cup milk, scalded
- 1/2 teaspoon salt
- dash of white pepper
- 1/4 cup sherry
- 12 ounce crab meat
- 1 cup crackers, finely crumbled
- 1/2 cup cheddar cheese, finely grated
Mini Pineapple Cakes

Special equipment: 6-cup mini Bundt pan Place an oven rack in the lower 1/3 of the oven
- One 3 1/2-pound pineapple, peeled, cored and cut into 1-inch pieces* (see Note Below)
- 2 tablespoons pineapple juice plus 2/3 cup
- 1/2 cup packed light brown sugar
- 2 tablespoons unsalted butter, at room temperature
- 3 egg whites
- 2/3 cup water
- 2/3 cup vegetable oil
- 1 1/2 teaspoons almond extract
- One 18.25-ounce box white cake mix (recommended: Betty Crocker Super Moist)
- Note: This recipe will also work using a 20 oz. can of crushed pineapple in 100% pineapple juice, drained and juice reserved.
