Double Chocolate Cake

1. Allow eggs to stand at room temperature 30 minutes
- 3 eggs
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 1 tsp. baking soda
- 3/4 tsp. baking powder
- 3/4 cup butter, softened
- 2 cups sugar
- 2 tsp. vanilla
- 1 1/2 cups milk
- 3 oz. dark or bittersweet chocolate, grated
- 1 recipe Chocolate Cream Cheese Frosting or Vanillar Sour Cream Frosting
Breakfast Sausage Bread

Allow dough to rise until nearly doubled
- 2 loaves (1 pound each) frozen white bread dough, thawed
- 1/2 pound mild Jimmy Dean® Premium Pork Sausage Roll
- 1/2 pound bulk spicy pork sausage
- 1-1/2 cups diced fresh mushrooms
- 1/2 cup chopped onion
- 3 eggs
- 2-1/2 cups (10 ounces) shredded mozzarella cheese
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 1 teaspoon dried rosemary, crushed
- 1 teaspoon garlic powder
Hoeny Mustard Glazed Salmon

Heat grill 425 degrees. Make glaze - place ingredients in saucepan and heat on grill, stirring occasionally
- 1/4 cup honey
- 3 tbsp. Dijon mustard (such as Grey Poupon)
- 1 tbsp. low-sodium soy sauce
- 1 tsp. ground ginger (I grate fresh ginger)
- 1 5oz. skin-on salmon fillets, patted dry

Preheat oven to 375 degrees
- 1 pkg. (15oz.) refrigerated pie crusts
- 2 slices bacon, cooked and crumbled
- 1/4 cup chopped green onions
- 2 eggs
- 1/2 cup half-and-half
- 1/3 cup grated Parmesan cheese
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1 pkg. (9oz.) frozen spinach, thawed and squeezed to drain
Orecchiette with Broccoli Rabe and Sausage

Trim the broccoli rabe by cutting off any tough stems, and chop into 1 inch pieces
- 1 lb. orecchiette pasta
- 1 lb. broccoli rabe
- 1 lb. Italian sausage (mild or spicy)
- 3 cloves garlic, minced
- pinch of red pepper flakes
- sea salt and cracked pepper to taste
- 1/3 cup olive oil
- Serve with Parmesan or Romano

- 2 green peppers, medium to large
- 1 cup vinegar
- 2 cups sugar
- 1 tsp salt

Kale Salad with Pickled Beets, Bacon, Blue Cheese, and Honey-Clove Vinaigrette

In a 3-quart saucepan, combine the vinegar, sugar, fennel and caraway seeds, peppercorns, mustard seeds, bay leaves...
- For the pickled beets:
- 1-1/2 cups cider vinegar
- 3/4 cup granulated sugar
- 1 Tbs. fennel seeds
- 1 Tbs. caraway seeds
- 1 Tbs. black peppercorns
- 1-1/2 tsp. yellow mustard seeds
- 5 bay leaves
- 1 cinnamon stick
- Kosher salt
- 1 lb. baby beets (about 1-inch diameter), peeled and very thinly sliced on a mandolin
- For the dressing:
- 1/4 cup cider vinegar
- 1 Tbs. honey
- 1/4 tsp. ground cloves
- 3/4 cup extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 1 lb. lacinato kale, washed, stemmed, and torn into bite-size pieces
- 1 lb. slab bacon, cut lengthwise into1/2-inch slices and crosswise into 1/2-inch-thick lardons
- 4 oz. blue cheese, crumbled into large pieces

- 6 oz. pork belly or slab bacon, cut into 1/2-inch thick by 2-inch long pieces

- 1 Tbs. malt vinegar
- 14 oz. rainbow chard, washed, stemmed, and cut into bite size pieces
- 14 oz. Russian kale, washed, stemmed, and cut into bite size pieces
- 1/2 oz. (1 Tbs.) unsalted butter
- 6 oz. scallions, white parts only, roots trimmed
- 5 oz. king oyster mushrooms, (or shitake or portabella) sliced 1/4-inch thick lengthwise
- Kosher salt and freshly ground black pepper
- 1/3 cup lower salt chicken broth
