In a small saucepan, warm the milk over moderately low heat until it's 95°
- 1 cup milk
- 2/3 cup sugar

- 1/2 teaspoon fine sea salt
- 4 1/4 cups all-purpose flour, plus more for dusting
- One 10-ounce package IQF (Individually Quick Frozen) raspberries, not thawed
- 1/4 cup plus 2 tablespoons sugar
- 1 teaspoon cornstarch
- 3/4 cup confectioners' sugar
- 3 tablespoons unsalted butter, melted
- 1 1/2 tablespoons heavy cream
Hot Fried Turkey

For the Brine: Whisk water, hot sauce, salt and sugar in a bowl until salt and sugar dissolve

Hearty Potato Soup

Cook potatoes, carrots and celery in water until tender, about 20 minutes
- 6 medium potatoes, peeled and sliced
- 2 carrots, diced
- 6 celery stalks, diced
- 2 qts. water
- 1 onion, chopped
- 6 Tbsp. butter
- 6 Tbsp. flour
- 1 tsp. salt

- 1 cup farro
- 1/2 cup walnut pieces
- 2 cups lightly packed baby spinach leaves, chopped
- 1/2 English cucumber, diced
- 3 ounces feta cheese, crumbled (2/3 cup)
- 1 scallion, green and white parts, thinly sliced
- 1/4 cup fresh Italian parsley leaves, chopped
- 3 tablespoons fresh dill fronds, chopped
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
