Coconut Toffee

Line a 8- by 8-inch brownie pan with wax or parchment paper, overlapping the sides for easy lifting later
- 1 1/2 cups white granulated sugar
- 1/4 teaspoon ground cardamom
- 2 drops red food coloring, optional
- 1 1/2 cups desiccated unsweetened coconut
- 1 tablespoon ground raw, unsalted cashews, optional
- Chai, for serving
Soba Noodle Salad

Makes 4 main-course servings
- One 8-oz package soba noodles
- 2 Tbs soy sauce
- 2 Tbs Asian sesame oil
- 1 Tbs fresh lime juice
- 2 Tbs rice vinegar
- 2 Tbs extra-virgin olive oil
- 1 tsp grated fresh ginger
- 1/4 cup sesame seeds, toasted
- 1/4 cup chopped fresh cilantro
- 4 green onions, sliced
- 1 cucumber, peeled and diced
- 6 radishes, thinly sliced
- Chopped peanuts for garnish (optional)
Lime Coconut Buttermilk Pie

Pour into a 9" unbaked pie shell and place on a baking sheet
- Whisk Together:
- 1 1/2 cups sugar
- 3/4 cup sweetened shredded coconut
- 1/2 cup buttermilk
- 1/2 cup unsweetened coconut milk
- 1 tbsp. flour
- 2 eggs
- 2 egg yolks
- 1/2 tsp. vanilla
- Minced zest and juice of 1 lime
- Pinch of salt
Pizza Rustica

Pre-heat oven to 350ºF—increase to 550ºF
- 7 1/2 cups all-purpose flour (approximately)
- 1 pkg dry active yeast
- 2 1/2 cups water, warm (90-115ºF)
- 1/2 tbsp +1 tsp salt
- 1 tbsp extra virgin olive oil
- All-purpose flour as needed
- 1 eggplant, peeled and cut into very thin slices
- 16 fresh garlic cloves
- 1 tbsp extra virgin olive oil
- 20 thin slices prosciutto ham
- 4 rounds fresh mozzarella cheese, cut into slices

German Chocolate Pecan Pie

In a food processor, pulse the flour with 1/2 teaspoon salt
- 1 1/4 cups flour
- 1 teaspoon salt
- 1 stick (4 ounces) plus 5 tablespoons unsalted butter, 1 stick chilled and cut into small pieces
- 1/4 cup ice water
- 2 large eggs
- 1 1/4 cup dark brown sugar
- 1/2 cup light corn syrup
- 2 1/2 cups (about 10 ounces) pecan halves, coarsely chopped
- 3/4 cup sweetened flake coconut
- 3/4 cup semisweet chocolate chips
Roasted Garlic and Pumpkin Hummus
