Creamed Spinach & Squash

Spray 2 1/2 qt. dish with cooking spray
- 2 tsp butter
- 1 cup diced onion
- 4 pounds squash cut in 1/2" pieces
- 1/2 cup water
- 2 9oz. boxes creamed spinach; thawed
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 tsp nutmeg
White Sangria

Serve over ice and some sparkling water - gives it just enough bubbles to make it fancy
- Bottle of white - Pinot Grigio or Savignon Blanc
- 1/4 cup brandy
- 1/4 cup peach schnapps
- fruit slices of your liking

Preheat the oven to 400 degrees F
- 6 cups all-purpose flour
- 4 tablespoons baking powder
- 1/4 teaspoon salt
- 3 sticks cold butter, cut into pieces
- 3 1/2 cups whole milk
- Melted butter, for brushing, optional

Preheat the oven to 350 degrees F
- 1 1/2 sticks unsalted butter (let stand at roomtemp)
- 3 eggs (let stand at room temp)
- 1 3/4 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups granulated sugar
- 1/4 cup milk
- 3 tablespoons finely shredded lemon peel
- Butter baking spray
- Blueberries, coated with flour
- 3 to 4 cups powdered sugar
- 1 stick unsalted butter (let stand at room temp)
- 1 stick cream cheese
- 2 tablespoons fresh lemon juice
- 2 tablespoons lemon zest
- Lemon peel
- Blueberries

Chunky White Bean Soup with Pan-Fried Salami

In a large saucepan, combine the beans with 1 tablespoon of the herbes de Provence and the smashed garlic cloves
- 1 pound dried cannellini beans, soaked overnight in water and drained
- 2 tablespoons herbes de Provence
- 6 garlic cloves, 3 smashed, 3 thinly sliced
- Kosher salt
- 2 tablespoons extra-virgin olive oil
- 1/2 pound spicy salami, such as Calabrese, cut into 1/2-inch dice
- 1 medium onion, finely chopped
- 2 carrots, finely chopped
- 2 celery ribs, finely chopped
- 6 cups chicken stock or low-sodium broth
- 3/4 pound kale, stems discarded, leaves finely chopped
- Freshly ground pepper
- 1/2 cup chopped flat-leaf parsley
