Grandma's Polish Perogies

In a large bowl, stir together the flour and salt
- 4 1/2 cups all-purpose flour
- 2 teaspoons salt
- 2 tablespoons butter, melted
- 2 cups sour cream
- 2 eggs
- 1 egg yolk
- 2 tablespoons vegetable oil
- 8 baking potatoes, peeled and cubed
- 1 cup shredded Cheddar cheese
- onion salt to taste (optional)
- salt and pepper to taste
Fish Dinner (Dad)

Dad suggests trying this recipe after a good day of ice fishing - on a cold winter evening - or the office!
- 1 tbsp. butter, plus 2 more tbsp. butter
- 1 cup sliced mushrooms
- 2 shallots, minced
- 1 lb. spinach, trimmed and washed
- salt and pepper
- 2 tbsp. flour
- 1 cup milk
- juice of 1/2 lemon
- 4 fish fillets (5-8 oz. each)
- 4 tbsp. breadcrumbs seasoned with salt and pepper and sweet paprika --- or 1/4 cup crumbled cooked bacon

- 1 cup granulated sugar

- 2 and 1/2 cups raspberries, fresh (300g) or frozen (340g)
- 3 Tablespoons (40g) granulated sugar
- 1 Tablespoon (15ml) warm water
- 2 teaspoons cornstarch
- Vanilla Glaze
- 1 cup (120g) confectioners' sugar, sifted
- 1 teaspoon vanilla extract
- 2 Tablespoons (30ml) heavy cream (or milk)

Filling: Place peeled, quartered potatoes in a pot of cold salted water

- 1 1/2 pounds potatoes (2 large russets)
- 2 teaspoons olive oil
- 1 /2 cup finely diced onion
- 1 small clove of garlic, crushed
- 3 ounces reduced fat cream cheese (1/3 cup)
- 1 /2 teaspoon salt
- pepper to taste
- Dough:
- 2 1/2 cups all purpose flour
- 1 /4 cup reduced fat sour cream
- 1 egg
- 2 /3 cup water
Pink Lemonade Layer Cake

Preheat the oven to 350 degrees F
- 1 (18 1/4-ounce) box white cake mix
- 1 teaspoon finely grated lemon zest
- 2 teaspoons vanilla extract
- 3 tablespoons sweetened pink lemonade drink powder
- Frosting
- 1 pound confectioners' sugar
- 1 cup (2 sticks) unsalted butter, softened
- 5 tablespoons frozen pink lemonade concentrate
