Beef Tenderloins with Raisin Cabernet Sauce

Prepare Cabernet raisin sauce
- Cabernet Raisin Sauce:
- 8 (4 oz. each) beef tenderloin steaks
- 2 tbsp. butter
- Salt
- Pepper
- 1/2 cup raisins, golden or regular
- 1/2 cup Cabernet Sauvignon wine
- 2 tbsp. butter
- 1 tsp. sugar
- 1 tbsp. shallot, finely chopped
- 1 sprig thyme, fresh (or 1/4 tsp. dried thyme)
- 1 cup brown sauce, fresh or canned
- 1 tsp. parsley, finely chopped
Bread and Butter Pickles

In large bowl, add sliced cucumbers and onions, garlic cloves and pickling salt; mix well
- 4 quarts pickling cucumbers
- 1 1/2 cups onions, sliced
- 2 large garlic cloves
- 1/3 cup pickling salt
- 2 quarts chopped ice
- 4 1/2 cups sugar
- 1 1/2 tsp. turmeric
- 1 1/2 tsp. celery seed
- 2 tbsp. mustard seed
- 3 cups white vinegar
Onion Soup with Gorgonzola and Prosciutto

Heat the olive oil in large stock pot or Dutch oven set on medium-high heat until sizzling, about 2 minutes
- 4 tablespoons olive oil
- 3 pounds onions, thinly slices
- 6 garlic cloves, thickly slices
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh Italian parsley
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh sage
- 1/4 tablespoon red pepper flakes
- 1 1/2 cups diced prosciutto, loosely packed
- 1 tablespoon flour
- 1 cup dry marsala wine
- 1 1/2 cups crumbled Gorgonzola cheeze
- 5 cups chicken stock
- 1/2 teaspoon salt
- 1/4 black pepper
- 1 cup croutons
Banana Cake (shhh - not from scratch)

Bake 350 for 35 minutes in greased and floured 9 x 12 Frost cake with the following: 1 package cream cheese ½ cu
- yellow cake mix
- 3 eggs
- 3 mashed bananas
- 1 cup sour cream
- 1/4 cup oil
Garlic Mashed Potatoes

Preheat oven to 400 degrees
- 4 medium/large russet potatoes
- 1 tablespoon butter
- 1 tablespoon minced fresh garlic (3-4 cloves)
- 3/4 cup water
- 1/2 cup cream
- 3/4 teaspoon salt
- 1/8 teaspoon black pepper
Cranberry Chutney

Combine the above in a large, heavy bottomed stainless pot (do not use aluminum, copper or cast iron)
- 6 cups fresh cranberries
- 1 3/4 cups water
- 3/4 cup red wine vinegar
- 2 1/2 cups sugar
- 1 1/2 cups raisins
- 1/4 cup molasses
- 3 dashes Tabasco sauce
- 1 tsp ground black pepper
- 2 1/2 tbsp curry powder
- 1 1/2 tbsp powdered ginger
- 1 1/2 tsp salt
Beef Pot Roast

Heat oven to 325 degrees. Tie parsley, thyme and bay leaves together with a piece of kitchen string
- 8 sprigs fresh parsley
- 8 sprigs fresh thyme
- 2 bay leaves
- 2 tbsp. vegetable oil
- Flour
- 1 boneless beef chuck roast (4 lbs.)
- kosher salt and freshly ground pepper
- 2 medium onions, sliced
- 6 gloves of garlic, smashed and peeled
- 1 cup red wine
- 1 (15oz.) can whole peeled tomatoes
- 4 medium carrots, cut in chunks
- 2 ribs celery, quartered
- 1 1/4 lbs. medium red potatoes, quartered
Shrimp Louis Dip

Stir all ingredients until well mixed
- 1 cup Hellmann's Real Mayonnaise
- 1 cup sour cream
- 1/3 cup finely chopped green pepper
- 1/4 cup chili sauce
- 1 Tbsp. prepared horseradish
- 1/4 tsp. salt
- 1/8 tsp. freshly ground pepper
- 2 cups finely chopped cooked shrimp
Garlicky Shrimp Cocktail

Preheat oven to 400 degrees F
- 1 lb. raw, tail-on shrimp, cleaned and deveined
- 2 tbsp. extra-virgin olive oil
- Juice of 1/2 lemon
- kosher salt
- Freshly ground black pepper
- 3 cloves garlic, minced
- 1/4 c. grated Parmesan
- 2 tbsp. chopped fresh parsley
- Marinara sauce, warmed, for dipping
Danish Coffee Cake

Make the coffee cake: Use the butter and flour and water in "part one" to make the bottom crust of this recipe
- First part:
- 1 cube (4 ounces) butter, cut into small pieces
- 2 tablespoons of water
- 1 cup of flour
- Second part:
- 1 cup of water
- 1 cube (4 ounces) butter
- 1 cup of flour
- 3 eggs
- 1 teaspoon of almond flavoring
- Ingredients for frosting:
- 1 cup powdered sugar
- 1 teaspoon vanilla
- Small amount of melted butter
- A splash of coffee
- Slivered almonds
