Creamy marinated artichoke pasta sauce

Ingredients
- 1 8oz. jar marinated artichoke hearts
- 1 T olive oil
- 1 T butter
- 1 large onion chopped
- 1 t dried basil or 1 T fresh
- 1/2 c cottage cheese
- 1/2 c sour cream
- Salt and pepper to taste
- Grated Parmesan cheese to taste
- 1/2 lb pasta cooked and drained

Preparation
Step 1
Drain marinade from jar of artichoke hearts into a skillet. Add olive oil and butter and heat until butter melts. Sauté onion in skillet for a few minutes.
Meanwhile chop artichoke hearts into bite-sized pieces and add to skillet and sauté a few more minutes until onion is translucent. Add basil and sauté a minute or two to blend flavors. Stir in cottage cheese and sour cream and gently heat through. Do not boil. Add salt and pepper to taste.
Pour sauce over cooked pasta and top with grated cheese.
