Best Basic Marinara Sauce

Saute onion and garlic in oil in large Dutch oven
- 3 tbs olive oil
- 3 cups chopped onion
- 1 tbs sugar
- 3 tbs minced garlic
- 2 tsp salt
- 2 tsp dried basil
- 1 1/2 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp freshly ground black pepper
- 1/2 tsp fennel seeds, crushed
- 2 tbs balsamic vinegar
- 2 cups chicken broth
- 3 28-oz cans crushed tomatoes
Creamed Chipped Beef

Melt butter. While the butter is melting, stir in the flour
- 3 packages chipped beef diced
- 2 1/2 cups light cream
- 2 cups milk
- 1 stick butter
- 1/2 cup flour
Down Home Sausage Gravy

Combine sausage and onion in large skillet
- 1 package fresh breakfast sausage - (16 oz)
- 2 tablespoons finely-chopped onion
- 6 tablespoons all-purpose flour
- 2 cans Carnation evaporated milk - (12 oz ea)
- 1 cup water
- 1/4 teaspoon salt
- 1/4 teaspoon hot pepper sauce or to taste
- 10 hot biscuits split
Overnight Praline Sticky Buns

In small bowl, combine sugar, pecans and cinnamon; set aside
- 1/2 cup sugar
- 1/2 cup pecans, chopped
- 1 tbs cinnamon
- 2 pounds frozen bread dough thawed
- 1/2 cup butter melted
- 1 tbs vanilla
- 1 package butterscotch pudding and pie filling not instant
- 1/3 cup raisins (optional)
Scrambled Egg And Bacon Casserole

For cheese sauce, in saucepan, melt 2 tablespoons butter
- 3 tablespoons butter or margarine divided
- 2 1/2 tablespoons flour
- 2 cups 2% milk
- 1/2 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- 1 cup shredded Cheddar and American cheese blend
- 1 cup diced Canadian Bacon
- 1 1/2 cups sliced fresh mushrooms
- 1/2 cup chopped green onion
- 1 dozen eggs beaten
- 1/4 cup melted butter
- 1 cup crushed cornflake crumbs
Broccoli- Rice Casserole

Cook celery, onion in water til soft
- 2 cups cooked rice
- 2 cups cooked broccoli
- 1 cup onions, diced
- 1 cup chopped celery
- 3/4 stick butter
- 1 cup shredded cheese
- 2 cans mushroons soup
- 2/3 cup water
- salt, pepper, garlic to taste
Brown Rice And Broccoli Stuffed Squash

Cut squash in half crosswise; scrape out and discard seeds
- 2 large acorn or golden acorn squash (abt 1 1/2 lbs ea)
- 1 cup uncooked quick-cooking brown rice
- 2 cups broccoli florets chopped
- 1/2 teaspoon freshly-ground black pepper
- 1/2 teaspoon salt
- 1/4 cup chopped almonds toasted
- 3/4 cup shredded sharp Cheddar cheese (or smoked gouda cheese)
Chicken Enchiladas

Saute onion, garlic and mushrooms in large skillet until soft
- Chicken Filling:
- 8 flour tortillas
- 1/2 medium onion, diced
- 1 clove garlic, minced
- 12 oz mushrooms, sliced
- 1 4-oz can green chilis, chopped
- 1 can black beans, drained
- 1 tsp chipotle peppers from can
- 1 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 lb cooked chicken, chopped
- 1/2 cup Monterey Jack cheese
- Sour Cream Sauce:
- 1 cups chicken broth
- 1 cup heavy cream
- 1 can cream of mushroom or chicken soup
- 1 tsp fresh lime juice
- 1/8 tsp salt
- 1 cup sour cream
- 1 tsp cumin
Baked Ziti Casserole

Preheat oven to 350 degrees
- 12 oz ziti or other tube pasta, cooked
- 4 cups Marinara Sauce
- 2 cups mozzarella cheese
- 1/2 cup Parmesan-Asiago blend cheese
- 1/2 tsp salt
- 16 oz spicy ground sausage
- 12 oz sliced mushrooms
- 1 cup diced yellow or red pepper
Ragout Of Pork Stroganoff

- 1 pound fresh mushrooms, sliced
- 2 pounds pork loin, cubed
- 6 tbs butter
- 1 cup chopped onions
- 1 1/4 cups dry white wine
- 3 tbs tomato paste
- 1 1/2 tsp salt
- 1 tsp sugar
- 1/2 tsp dill weed
- 1/4 tsp black pepper
- 2 tbs flour
- 1 cup sour cream
