Chicken Mole with Chipotles

Coat chicken with cumin. Saute chicken in oil about 5 minutes
- 3 skinless boneless chicken breasts, each cut into 3 pieces
- 2 tbs. ground cumin
- 1 tbs. olive oil
- 1 large onion, thinly sliced
- 2 14 ounce cans chili-style chopped tomatoes
- 1 cup chicken broth
- 2 tbs. minced canned chipotle chilies
- 1 tbs. baking cocoa
Mexican Triple Chocolate Cookies

Preheat oven to 325 degrees
- 1 cup flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp coarse salt
- 1/8 tsp ground pepper
- 1/2 lb chopped dark chocolate
- 1/2 cup unsalted butter
- 1 1/2 cups sugar
- 2 large eggs
- 1 tsp vanilla extract
- 3/4 cup semisweet chocolate chips
Spicy White Bean Dip

Process all ingredients except cilantro and green onions in food processor until smooth
- 3 tbs fresh lime juice
- 3 tbs olive oil
- 1 tsp ground cumin
- 2 cans northern beans, drained
- 1 cloves garlic, minced
- 1 tsp chili-garlic sauce
- 3/4 cup fresh cilantro, chopped
- 1/4 cup green onions, chopped
- 1/2 tsp salt
Wild Mushroom Soup

Melt 1 tablespoon butter in heavy large pot over medium heat
- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup chopped peeled carrots
- 24 oz fresh wild mushrooms sliced (such as crimini or stemmed shiitake)
- 1/2 cup dry white wine
- 4 cups chicken stock
- 1 cup potato, peeled and cubed
- 1 tbs chopped fresh thyme
- 1 bay leaf
- 1/2 cup whipping cream
- Salt to taste
- Black pepper to taste
- Chopped fresh parsley or chives
Apple Crumb Pie

Preheat oven to 350 degrees
- TOPPING:
- 1 9-inch unbaked pie crust
- 3 lb Granny Smith apples, peeled, cored, and thickly sliced
- 1 tbs fresh lemon juice
- 2 1/2 tbs unsalted butter
- 1/3 cup sugar
- 1 tsp ground cinnamon
- 2 tbs apple cider
- 1 tbs cornstarch
- 1/4 cup applesauce
- 3/4 cup flour
- 1/2 cup sugar
- 1/4 cup brown sugar
- 3/4 cup chopped walnuts
- 6 tbs unsalted butter - cut small pieces
- 1/4 tsp salt
German Chocolate Pie

Combine eggs, sugar, flour, vanilla and mix
- 1 unbaked crust
- 1 4-ounce Bakers German chocolate
- 1/4 cup butter or oleo
- 2 eggs
- 2 cups sugar
- 1 can evaporated milk
- 3 tablespoons flour
- 1 teaspoon vanilla
- Coconut, chopped pecans
Moroccan Vegetable Stew

In a large pot, saute the onion in olive oil for 5 minutes or until soft
- 2 cups diced onion
- 2 teaspoons olive oil
- 1 tablespoon tomato paste
- 5 cups vegetable stock divided
- 2 cups acorn or delicata squash in 1" pieces
- 2 cups butternut squash in 1" pieces
- 1 1/2 cups turnips in 1" pieces
- 1 1/2 cups carrot in 1" pieces
- 1 1/2 cups celery in 1" pieces including green tops
- 1 1/2 tablespoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon salt
- 1/2 teaspoon freshly-ground black pepper
- 2 cups cabbage in 1" pieces
- 1 1/2 cups zucchini in 1" pieces
- 1 can chickpeas - (15 oz) drained, rinsed
- 1/3 cup freshly-chopped Italian parsley
French Coconut Pie

Whisk together ingredients and pour into unbaked pie shell
- 1 unbaked 9-inch pie crust
- 3 eggs
- 1 cup sugar
- 1 1/2 cup coconut
- 1 tbs vinegar
- 1 tsp vanilla
Baked French Toast Casserole

Slice French bread into 20 slices, 1-inch each
- PRALINE TOPPING:
- 1 loaf French bread - (13 to 16 oz)
- 8 large eggs
- 2 cups half-and-half
- 1 cup milk
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 dash salt
- 1/2 pound butter - (2 sticks)
- 1 cup light brown sugar - (packed)
- 1 cup chopped pecans
- 2 tablespoons light corn syrup
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- Maple syrup for serving
