Spinach Balls

Mix all ingredients until well combined
- 2 (10 oz.) packages frozen spinach, thawed & well-drained
- 2 small onions, very finely chopped (I use a food processor)
- 2 1/4 c. stuffing with herbs (Pepperidge Farm)
- 6 eggs, beaten
- 1/2 c. melted butter
- 1/2 c. Parmesan cheese
- 2 tsp. garlic salt
- 1 tsp. black pepper
Grilled Asparagus with Roasted Red Pepper

Morton's Steakhouse
- 2 large, thick fleshed red bell peppers
- 36 thick asparagus spears (about 1 ½ pounds), all as close to the same size as possible
- ½ cup plus 2 tablespoons extra-virgin olive oil
- ¼ cup balsamic vinegar
- 1 tablespoon salt
- 1 tablespoon freshly ground white pepper
- 6 tablespoons balsamic glaze (see Note) or a balsamic-based vinaigrette
Browned Beef Stew

My own recipe
- 2.5 lbs beef stew meat, cut in 1.5" cubes
- 1/3 c flour
- 1/3 c salad oil
- 1 large onion, chopped
- 1 garlic clove, minced
- 5 beef bouillon cubes
- 1 tsp salt
- 1/2 tsp worcestershire
- 1/4 tsp pepper
- 5 medium potatoes, cut in chunks
- 1 16 oz bag carrots, cut in chunks
- 1 10 oz pkg frozen peas
