Avocado Bruschetta with Balsamic Reduction

With ripe avocado and juicy grape tomatoes, this is the perfect midday treat or party snack!
- 1 baguette, thinly sliced
- 1/4 cup olive oil, divided
- 1/2 cup balsamic vinegar
- 2 tablespoons brown sugar
- 2 cups cherry tomatoes, halved
- 1 avocado, halved, seeded, peeled and diced
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup basil leaves, chiffonade
Summer Pasta Salad

Boil pasta according to the directions on the box
- 1 lb Farfalle
- 1 jar marinated artichoke hearts
- 1 jar manzanilla olives
- 1 5.75 oz jar roasted peppers
- 1 7 oz jar small pitted ripe olives
- 2 T golden balsamic vinegar
- 2 T basil flavored extra virgin olive oil
- 1 T chopped fresh basil
- 1 sm purple onion (quartered and sliced into strips)
- 4 fresh Roma tomatoes (sliced into medallions)
Italian Chicken Bowtie Pasta

1. Add 2/3 cup salad dressing to the cubed chicken and stir together
- 4 * 4 skinless, boneless chicken breast halves - cooked
- 1 * 1 (16 ounce) package farfalle pasta
- 1 * 1 (8 ounce) bottle Italian-style salad dressing
- 1 * 1 tomato, chopped
Zucchini Risotto

1. Bring vegetable or chicken stock to a boil in a medium stock pot, then reduce heat to a low simmer
- 7 * 7 cups vegetable or chicken stock
- 1 * 1 tablespoon butter
- 1 * 1 medium onion, chopped
- 2 * 2 cups Arborio rice, uncooked
- 1/2 * 1/2 medium zucchini, thinly sliced with a vegetable peeler
- 10 * 10 sun-dried tomatoes, softened and chopped
- 1 * 1 teaspoon dried thyme, crushed
- 6 * 6 tablespoons freshly grated Parmesan (or mozzarella) cheese
- 1 * 1 tablespoon chopped fresh basil leaves, or to taste (optional)

Bacon Spinach Salad with Hot Dressing

A delicious and easy salad made with savory bacon dressing and fresh baby spinach
- # 7 oz. fresh baby spinach leaves
- # 2 tablespoons olive oil
- # 1/3 cup medium red onion, thinly sliced
- # 1/4 cup crumbled feta cheese
- # 7oz. package feta cheese, crumbled
- # 2 tablespoons Red wine vinegar, or herb flavored vinegar
- # 4 pieces of thick cut bacon, sliced into 2" pieces
- # 1 tablespoon sugar
- # Apple wedges, or croutons (optional)
Prime Rib Au Jus

- 1 8-10 lb prime rib
- 1/4 cup rosemary
- 1/2 cup kosher salt

- 1 (18.25 ounce) package yellow cake mix
- 4 eggs
- 1/4 cup vegetable oil
- 2 tablespoons water
- 1 (3 ounce) package instant pistachio pudding mix

- 1/2 cup maraschino cherries
- 1/2 teaspoon green food coloring
