Grilled Eggplant with Mozzarella

Sprinkle both sides of the eggplant slices with salt and place between layers of paper towels
- 1 large eggplant, cut into 1/2" slices
- Salt
- 1/2 cup olive oil
- 3 T balsamic or red wine vinegar
- 2 cloves garlic, finely chopped
- 1 tsp oregano
- Salt and freshly groun pepper to taste
- 6 oz mozzarella cheese, thinly sliced

- 1 (5 oz) log goat cheese
- 2 T chopped fresh parsley
- 1 (16 oz) jar pickled okra, drained
- 1 (10 oz) jar pitted kalamata olives, rinsed and drained
- 1 (7 oz) jar roasted red bell peppers, drained and cut into strips
- 1 (4 oz) package sliced salami

Chocolate Cupcakes with Flaming Strawberries

The strawberries are hollowed out and filled with a bit of liquor, then ignited with a match
- Cupcakes:
- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups all purpose flour
- 1 1/2 cups sugar
- 1 1/2 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp salt
- 2 eggs
- 3/4 cup hot water
- 3/4 cup heavy cream
- 3 tbsp canola or other vegetable oil
- 2 tsp vanilla extract
- Frosting:
- 2 sticks softened butter
- 4 cups confectioners' sugar
- 4 tbsp unsweetened cocoa powder, sifted
- Strawberries:
- 18-24 Strawberries - you'll need as many as you have cupcakes
- Vodka, rum, or your choice of liquor 80 proof or higher (over-proof such as 110 will give you a yellow flame)
Madeira Sauce

Heat 2 T butter in a heavy saucepan
- 2 T butter
- 1/4 cup minced carrots
- 1/4 cup minced celery
- 1/4 cup minced onion
- 2 T flour
- 2 cups brown beef broth
- 1/2 cup diced fresh or canned tomato
- 1 bay leaf
- Pinch of thyme
- 3 T Madeira wine
- Salt and pepper to taste
- 1 T butter

Fried Mozzarella Cheese Balls with Quick Tomato Sauce

For the cheese balls: Drain the cheese and dry on paper towels

- 1 8 oz container of mozzarella balls, such as bocconcini
- 2 large eggs
- 1/4 cup of milk
- 1 cup of plain flour
- 2 cups of breadcrumbs or panko
- 1 tablespoon of dried oregano
- salt and pepper
- canola oil for frying
- For the quick tomato sauce:
- 1 tablespoon of olive oil
- 1/2 onion, chopped
- 1 garlic clove, chopped
- 1 14 oz can of diced or whole tomatoes
- 1 teaspoon of dried basil or oregano or a combination of both
- salt and pepper
