Tanglewood Bistro's Harvest Salad

I fell in love with this salad - and shortly after that, the Bistro closed!
- Greens
- Grated Swiss cheese
- Spiced walnuts
- Dried cranberries
- Diced apples
- Diced pear
- Slivered red onions
- Poppyseed dressing
Stuffing

This is a very sticky, moist stuffing - just how I like it
- 1 cup chopped onion
- 1/2 cup pureed onion
- 2 cups chopped celery
- 1 cup pureed celery
- 1 cup chopped or grated carrots
- 1 pound fresh mushrooms or 8 ounces canned mushrooms, sliced
- 2 tbsp dried parsley
- 1 tsp poultry seasoning, more to taste
- Ground black pepper, to taste
- Ground sage, to taste
- 1 large bag of Pepperidge Farms whole wheat/white bread stuffing mix stuffing cubes (the stuff without any seasonings)
- Vegetable broth to add moisture, if needed (about 1 to 2 cups)

Rhubarb Cake

Mix together cake ingredients
- Cake:
- 1/2 cup shortening
- 1 1/2 cups brown sugar
- 1 egg
- 1 cup rhubarb, chopped
- 1 tbsp baking soda (tsp???)
- 1 cup sour cream
- 2 cups flour
- 1 tbsp vanilla (tsp???)
- Pinch of nuts
- Pinch of salt
- Topping:
- 1/2 cup sugar
- 1 tsp cinnamon
- 1 tsp butter
Banana Date Cake

Preheat oven to 350 F. Grease and dust muffin tin or loaf pan with rice flour
- 1 cup rice flour, preferably brown
- 1/3 cup tapioca flour
- 1/2 cup potato starch
- 2 tbsp garbanzo bean flour
- 1 tsp xanthan gum
- 1 tbsp baking powder
- 1 tsp baking soda
- 2 tsp powdered egg substitute
- 1/4 tsp salt
- 1/2 cup canola oil
- 1 1/3 cups sugar
- 2 eggs and 1 egg white
- 1/2 cup milk, milk alternative or water
- 1 tbsp lemon juice
- 1 tsp almond extract
- 1 cup mashed ripe bananas
- 1 cup chopped dates (buy whole, as pre-chopped are often coated with wheat flour)
- Cream cheese or vanilla icing
Sarah's Reduced-Fat Chocolate Fudge Cake with Chocolate Fudge Reduced-Fat Frosting

- Cake:
- 2 ounces bittersweet chocolate (2 squares)
- 1 3/4 cups sugar
- 4 tbsp (1/2 stick) unsalted butter, at room temperature
- 1/2 cup sour cream or buttermilk
- 1 large egg
- 2 large egg whites
- 2 cups cake flour, not self-rising
- 1/2 cup Dutch-process cocoa powder or natural cocoa powder
- 1 cup hot, strong coffee (or 2 tsp instant espresso powder dissolved in 1 cup hot water)
- 1 tsp baking soda (added last)
- Frosting:
- 1 ounce bittersweet chocolate (1 square)
- 1 tsp instant espresso coffee powder
- 2 tbsp boiling water
- 1 tbsp unsalted butter, melted
- 1 tbsp Dutch-process cocoa powder
- 1 1/2 cups confectioners' sugar
- 2 tbsp 1% lowfat milk
- 1/2 tsp vanilla extract
Pineapple-Coconut Freeze

Place all ingredients in a blender and mix on medium speed for 1 minute
- 1 (12 ounce) can juice-packed pineapple chunks, undrained
- 1/2 ½ cup plain low-fat milk (soy or dairy)
- 1 banana, in chunks
- 4 scoops shaved ice
- 2 tbsp pure coconut milk
- 1 scoop chocolate ice cream

Homemade Muesli

In a large bowl, mix all ingredients
- 2 1/2 cups old-fashioned rolled oats
- 1 1/2 cups (rolled) barley flakes
- 1 1/2 cups (rolled) wheat flakes
- 1 cup dark seedless raisins
- 1/2 cup coarsely chopped dried apple
- 1/2 cup unprocessed oat bran
- 1/2 cup wheat germ
- 1/4 cup chopped almonds or hazelnuts
- 3 tbsp light brown sugar
Roman Meal Muffins

Combine flour, wheat germ, baking powder, salt and Roman Meal in mixing bowl
- 1/2 cup whole wheat flour
- 1/2 cup wheat germ
- 1 tsp baking powder
- 1 tsp salt
- 1 cup Roman Meal
- 1 egg
- 3 tbsp oil
- 3 tbsp honey
- 1 cup milk
