The subtle, nutty taste of Basmati rice is enhanced with the addition of fresh lemon zest and sweet spices
- 1 cup brown Basmati rice
- 2 cups water or Vegetable Stock (recipe in collection)
- Grated zest of 1 lemon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- Pinch of saffron (optional)
- 1 tbsp chopped fresh parsley, for garnish

- 1/2 cup margarine
- 1 cup brown sugar
- 1 egg, well beaten
- 2 cups flour
- 1 tsp baking powder

Wash and dry the raisins and currants
- 2 cups seedless raisins
- 1 cup currants
- 1 1/2 cups separated seeded raisins
- 1 1/2 cups red and green maraschino cherries, drained

- 1 cup dates, chopped
- 1 1/2 cups candied peels and citron
- 1/2 cup candied pineapple or other fruits
- 1 cup zucchini, grated
- 1 tbsp candied ginger, chopped
- 3 cups flour, sifted once
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp ground cinnamon

Theresa's Zucchini Bread

- 3 eggs
- 1 cup vegetable oil
- 2 cups sugar, may use part brown sugar
- 2 cups zucchini, peeled and grated
- 1 1/2 tsp vanilla
- 3 cups flour
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp baking powder
- 3/4 cup raisins, coconut or dates, optional
- Grated orange or lemon rind to taste, optional
Spinach Salad with Apple-Hazelnut Dressing
