Zucchini Carrot Cupcakes

Preheat oven to 350 F. Line a cupcake pan with 12 paper muffin liners
- 1 cup all-purpose flour
- 1/4 cup whole-wheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3/4 cup sugar
- 2 eggs
- 1/2 cup canola oil
- 1 1/2 tsp vanilla extract
- 1 cup grated zucchini (about 1 small zucchini)
- 1 cup grated carrot
- 1/4 cup chopped walnuts (optional)
- Cream Cheese Icing (your recipe or commercial)
Lemon Bread

Preheat oven to 350 F. Grease and flour a 9-by-5-inch loaf pan
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1 tsp baking powder
- 6 tbsp butter, softened
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- Grated peel and juice of 1 lemon
- 1/4 cup poppy seeds (or chopped walnuts)
- 1/2 cup confectioners' sugar
Carrot Ribbon Salad

For the dressing, in a large bowl whisk together the mayonnaise, lemon peel, lemon juice, sugar, salt, and pepper
- 6 tablespoons mayonnaise
- 2 teaspoons finely shredded lemon peel
- 5 tablespoons fresh lemon juice
- 1 tablespoon sugar
- 1 teaspoon fine sea salt
- 3/4 teaspoon finely ground black pepper
- 3 pounds carrots
- 1/2 cup raisins
- 1 small bunch green onions, sliced
