Smooth and Spicy Tomato Salsa

Combine garlic, onions and jalapeno in blender or food processor and process until finely chopped
- 2 cloves garlic, peeled
- 1 small red onion, peeled and quartered
- 1 jalapeno, seeded and quartered
- 8 plum tomatoes, quartered
- 1 cup cilantro leaves, whole, washed and dried
- Juice of 1 lime
- 2 tbsp olive oil
- Salt
- Pepper
Nutty Corn Sticks

Combine first five ingredients and let sit 1/2 hour
- 1 egg, beaten
- 2/3 cup milk
- 3 tbsp honey
- 1/4 cup peanut butter
- 1/2 cup high-lysine cornmeal
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp salt
Zucchini Hotcakes (Savory)

Melt 1 tablespoon of butter in a large skillet
- 1 1/2 cups zucchini, unpeeled and grated
- 2 tbsp onion, chopped
- 1/4 cup Parmesan cheese
- 1/4 cup flour
- 2 eggs
- 2 tbsp mayonnaise
- 1/4 tsp oregano
- Salt, to taste
- Pepper, to taste

Pina Colada Pops

Put all ingredients into a blender and blend until smooth
- 1 (15-ounce) can crushed pineapple with juice
- 1 (15-ounce) can cream of coconut
- 1/2 cup Splenda granulated sweetener
- 1/2 cup plain 2 percent Greek yogurt
Green Tea and Lime Granita

Stir the sugar into the tea
- 2 cups brewed green tea
- 3/4 cup sugar
- 6 limes juiced (save skins to hollow out and serve granita in)
- 1 lime zested and juiced
- 1/4 tsp salt
