Corn Cheese Scallop

- 1/4 cup butter
- 1/4 cup flour
- 1 1/2 cups milk
- 1 cup shredded Cheddar cheese
- 1 (12 ounce) can whole kernel corn with sweet red peppers, drained
- 1 (8 1/2 ounce) can golden cream style corn
- 3 eggs, beaten
- 1 tbsp prepared mustard
- 1 cup soft bread crumbs
- 1 tsp sugar
- 1/2 tsp salt
- 1/8 tsp red pepper
- 1/2 cup cracker crumbs
- 1 tbsp melted butter

- 5 to 10 jalapeno, habanero or Scotch bonnet peppers, seeded and finely chopped (see note)
- 2 cups finely chopped red onions
- 2 cloves garlic, finely chopped
- 1/2 cup lime juice
- 1/2 cup loosely packed finely chopped cilantro
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- Note: Use a variety of hot peppers to regulate the heat. If you don’t mind heat, leave the seeds and veins in the peppers.

Spicy Jalapeño Corn Fritters

In a large bowl, mix first 6 ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 teaspoon smoked paprika
- 1 teaspoon sugar
- 2 teaspoons whole coriander seeds (toasted and then ground)
- 3/4 cup whole milk or half-and-half
- 2 eggs, beaten
- 2 tablespoons lime juice
- Zest of one lime
- 3 cups fresh cut corn kernels (about 3 ears)
- 6 scallions, chopped
- 3/4 cups crumbled queso fresco cheese
- 1 jalapeño, finely minced
- Serve with a tomatillo salsa.
Apple Blackberry Crisp

- 1 cup frozen blackberries, thawed slightly
