  • 1 teaspoon freshly ground black pepper
  • Note: Use a variety of hot peppers to regulate the heat. If you don’t mind heat, leave the seeds and veins in the peppers.

  • 3/4 cup whole milk or half-and-half
  • 2 eggs, beaten
  • 2 tablespoons lime juice
  • Zest of one lime
  • 3 cups fresh cut corn kernels (about 3 ears)
  • 6 scallions, chopped
  • 3/4 cups crumbled queso fresco cheese
  • 1 jalapeño, finely minced
  • Serve with a tomatillo salsa.
