- 1/4 pound spinach spaghetti or fettucini
- 2/3 cup skim-milk ricotta cheese
- 1 large ripe tomato
- 1 small onion
- 1/2 clove garlic, pressed
- 1/4 tsp dried basil leaves
- 1/8 tsp dried oregano leaves
- 1 tbsp grated Parmesan cheese

- 1 large block tofu
- 3 cups ice cubes

Tomato Eggplant Tart

Sprinkle the eggplant slices on both sides with 1 teaspoon salt and place in a colander
- 1 (1 1/2 pounds) eggplant, peeled and sliced 1/4 inch thick
- 1 1/4 teaspoons salt, divided
- Freshly ground pepper
- 2 teaspoons olive oil
- 1 cup sliced mushrooms
- 1 (28-ounce) can plum tomatoes, drained and chopped, see note
- 2 tablespoons capers, drained
- 2 tablespoons chopped fresh basil leaves or 1 teaspoon dried
- 1 tablespoon chopped fresh oregano or 1/2 teaspoon dried
- 1 tablespoon chopped fresh thyme or 1/2 teaspoon dried
- 2 garlic cloves, minced
- 3 ounces goat cheese, crumbled
