Apple Salad with Cranberry Confetti Dressing

Combine all the dressing ingredients in a blender or food processor, using the sharp blade
- Dressing:
- 1 tbsp olive oil
- 3/4 c freshly squeezed orange juice
- 1 cup fresh cranberries, washed and drained
- 3 tsp Splenda
- 3 ounces cream cheese
- 1/2 tsp freshly grated orange zest
- Salad Ingredients:
- 1/3 cup diced celery
- 2 apples, peeled, cored and diced (about 2 cups)
- 1 (11 ounce) can mandarin oranges, drained
- 1/2 cup chopped walnuts
