Three Bean Soup with Country Cornbread

Soup: In a medium kettle, saute the onion and garlic until tender
- Soup:
- 1 medium yellow onion, chopped
- 2 small cloves garlic, chopped
- 1 tbsp vegetable oil
- 3 medium red potatoes, peeled & cubed
- 3 medium carrots, scrubbed and sliced
- 1 cup frozen corn, thawed
- 3 cups chicken stock
- 3 cups water
- 2 tbsp dried parsley
- 2 tsp dried basil
- 1 tsp dried oregano
- 1 can great northern beans, rinsed and drained
- 1 can pinto beans, rinsed and drained
- 1 can garbanzo beans, rinsed and drained
- Pepper to taste
- Salt to taste
- Cornbread:
- 2 cups all purpose flour
- 2 cups corn meal
- 2 tbsp baking powder
- 1 1/2 tsp salt
- 1 tbsp sugar
- 2 eggs
- 2 cups milk
- 1/2 cup butter

Mix all together and store in a shaker jar
- 1/2 cup cornstarch
- 2 cups baking soda
- 1 tbsp ground cloves
- 4 to 5 crumpled bay leaves
Whole Wheat Bread (Large Loaf for Bread Machine)

If the recipes for your bread machine use 3 cups flour, make this large loaf
- 1 1/2 cups whole wheat flour
- 1 1/2 cups unbleached white flour
- 1/4 cup nonfat dry milk powder
- 1 tbsp sugar
- 1 tsp salt
- 2 tbsp molasses
- 1 tbsp margarine or butter
- 1 1/2 tsp fast rise yeast
- 1 cup water

- 1/2 cup butter or margarine
- 1 1/2 cups sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups flour, plus a little extra for coating berries

- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 12 tablespoons chilled unsalted butter, cut into1/2-inch pieces
- Filling:
- 2 1/2 pounds plums, pitted and quartered
- 1/4 cup sugar (optional—many prefer no sugar)
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
