Minty Grapefruit Cocktail

In a large saucepan, cook sugar and water over low heat until sugar dissolves

- 1/2 cup sugar
- 1/2 cup water
- 1/4 cup fresh mint sprigs
- Juice of 4 lemons
- 1 1/2 cups grapefruit juice
- Seltzer water
- 4 mint sprigs
Apple Fritters

In large bowl, combine dry ingredients
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1 tsp salt
- 1/2 tsp ground nutmeg
- 2 eggs
- 1 cup milk
- 4 large apples, grated
Peanut Butter Shake

In a blender, whirl milk, peanut butter, and vanilla ice cream until smooth
- 1/2 cup milk
- 1/4 cup peanut butter
- 3 scoops of vanilla ice cream

Fifteen-Bean Soup

Heat olive oil in a soup pot over medium heat
- 1 pound 15-bean mix, soaked for 12 hours in 2-3 parts water to 1 part beans
- 1/4 cup light olive oil
- 1 pound bulk New York Style sausage
- 2/3 cup diced onions
- 2/3 cup diced celery
- 2/3 cup diced carrots
- 1 tablespoon crushed garlic
- 1 tablespoon minced shallots
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/4 tsp dried thyme
- 2 tbsp red wine
- 1 tbsp balsamic vinegar
- 1 tsp Worcestershire sauce
- 1/2 tsp hot pepper sauce
- 1 quart chicken stock
- 1 cup canned crushed tomatoes in puree
Tomato-Lentil Soup

- 2/3 cup dried lentils
- 4 cups Vegetable Stock (recipe in collection) or water
- 1 tbsp butter
- 2 cloves garlic, minced
- 1 medium-size onion, chopped
- 4 carrots, chopped
- 2 stalks celery, chopped
- 3 cups (28 ounce can) cooked tomatoes
- 1 bay leaf
- 3/4 cup (6 ounce can) tomato paste
- 1/4 cup chopped fresh parlsey
- 1 tsp dried thyme leaves
- 1 tsp dillweed
- 1 tsp dried tarragon
- 1 tsp dried marjoram
- Freshly ground pepper, to taste
