- 3/4 cup buttermilk (If no buttermilk, can mix 1 tbsp lemon juice with 1 cup milk and let sit for 5 minutes. Use 3/4 cup of this mixture.)

- 1 1/2 cups white sugar
- 2 teaspoons vanilla extract
- 2 teaspoons ground cinnamon

- 2 teaspoons baking soda
- 2 cups shredded carrots (NOTE: Try using food processor instead of grater for smaller strips)
