Pan-broiled Steak

Pan-broiled steak is very French and also a very nice method for cooking small steaks
- 3 1/2 Tb butter
- 1 1/2 Tb oil
- 2 to 2 1/2 lbs. steak 3/4 to 1 inch thick
- Salt and pepper
- 1/2 cup stock, canned beef bouillon, red wine, dry white wine, dry white vermouth, or water
Herbed Bread Stuffing with Mushrooms and Sausage

Preheat oven to 400°. Trim crust from bread
- 1 1/2 pounds peasant-style white bread (or ready-made stuffing bread cubes)
- 4 (4-ounce) links sweet turkey Italian sausage
- 2 teaspoons butter
- 1 pound cremini mushrooms, quartered
- Cooking spray
- 2 cups chopped onion
- 1 1/4 cups chopped carrot
- 1 1/4 cups chopped celery
- 1/2 cup minced fresh parsley
- 1 tablespoon fresh thyme leaves
- 1 tablespoon minced fresh sage
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 large eggs
- 1 (14-ounce) can fat-free, less-sodium chicken broth
Avgolemono Soup

Chicken Soup with Egg-Lemon Sauce Yields: 4 servings
- 1 rotisserie chicken, diced into large cubes
- 8 cups chicken stock
- 2 tablespoons olive oil
- 1 onion, finely diced
- 2 bay leaves
- 1 leek or celery, cleaned and quartered
- 1 carrot, peeled and quartered
- 2/3 cup orzo
- 2 large eggs
- 1/3 cup fresh lemon juice
- 1 tablespoon salt
- 1 teaspoon ground pepper
Pumpkin Baked Ziti

Preheat oven to 375 degrees F
- Butter, for greasing
- 1 pound sweet Italian sausage (can substitute for chicken or turkey Italian sausage)
- 3/4 cup chopped onion
- 1 tablespoon minced garlic
- 1 teaspoon red pepper flakes
- 2 tablespoons oil
- 2 (15-ounces) cans pumpkin puree
- 2 cups chicken stock
- 2 teaspoons chopped fresh sage leaves
- 2 teaspoons salt
- 2/3 cup heavy cream (or whole milk)
- 1 pound ziti pasta, cooked
- 2 tablespoons chopped fresh parsley leaves
- 1 cup freshly grated Parmesan
Grilled Pineapple

Place pineapple in a large resealable plastic bag
- 1 fresh pineapple - peeled, cored and cut into 1 inch rings
- 1/4 teaspoon honey
- 3 tablespoons melted butter
- 1 dash hot pepper sauce
- salt to taste
Spiced Almonds

1. Preheat the oven to 325 degrees
- 2 cups raw almonds
- 3 teaspoons ground cinnamon
- 2 1/2 teaspoons pumpkin pie spice seasoning
- 4 tablespoons organic agave or honey
- 1 teaspoon vanilla extract

Baked Beans

Soak beans in a large bowl of water for 6 hours or overnight
- 2 cups navy beans
- Salt
- 1/2 pound slab bacon, cut into cubes
- 1 medium onion, peeled and chopped
- 1/3 cup molasses
- 2 teaspoons dry mustard
- 1 teaspoon ground black pepper
- maple syrup to taste
Chicken with Herbed Goat Cheese

Preheat the oven to 375 degrees
- 3 whole (6 split) chicken breasts, bone-in, skin-on
- 12 ounces Montrachet goat cheese, with garlic and herbs
- Fresh basil leaves
- Good olive oil
- Kosher salt
- Freshly ground black pepper
Lemon-Garlic Shrimp and Grits

Bring 3 cups of water to a boil in a medium saucepan over high heat, covered
- NOTE: Double grits ingredients for 4 servings.
- 3/4 cup instant grits
- Kosher salt and freshly ground black pepper
- 1/4 cup grated parmesan cheese
- 3 tablespoons unsalted butter
- 1 1/4 pounds medium shrimp, peeled and deveined, tails intact
- 2 large cloves garlic, minced
- Pinch of cayenne pepper (optional)
- Juice of 1/2 lemon, plus wedges for serving
- 2 tablespoons roughly chopped fresh parsley
Caramelized Onions

1. Slice off the stem ends of the onions and place them cut side down on the cutting board
- Several medium or large onions, yellow, white, or red
- Olive oil
- Butter (optional)
- Salt
- Sugar (optional)
- Balsamic vinegar (optional)
