- 1/4 cup slivered almonds
- 1 tablespoon olive oil
- 1 1/4 pounds (about 2 bunches) collard greens, stalks removed, leaves thinly sliced crosswise
- 1/2 cup raisins
- 2 teaspoons white-wine vinegar
Easy Sole Meuniere

- 6 cups boiling white stock or chicken stock; or canned chicken broth and 2 parsley sprigs, 1/3 bay leaf, and 1/8 tsp thyme
- 3/4 to 1 lb fresh mushrooms (stems chopped, caps thinly sliced, separated)
- 1 tsp lemon juice
- 2 egg yolks
- 1/2 to 3/4 cup whipping cream
- Salt and pepper to taste
- 6 to 8 fluted mushroom caps, cooked in butter and lemon juice; and/or 2 or 3 Tb minced fresh chervil or parsley
