Kickin' Collard Greens

Heat a large pot over medium-high heat
- 6 slices bacon, chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 cups chicken broth
- 1 pinch red pepper flakes (don't use for kids)
- 1 pound fresh collard greens, cut into 2-inch pieces (2 bunches)
- Apple cider vinegar
Muddy Buddies

In 1-quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High 1 minute; stir
- 9 cups Rice Chex™, Corn Chex™ or Chocolate Chex™ cereal (or combination)
- 1 cup semisweet chocolate chips
- 1/2 cup peanut butter
- 1/4 cup butter or margarine
- 1 teaspoon vanilla
- 1 1/2 cups powdered sugar
Turkey, Kale and Brown Rice Soup

Heat the oil in a large pot over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 5 to 6 large shallots, chopped
- 3 medium carrots, cut into 1/2-inch pieces (about 1 1/3 cups)
- 1 large red bell pepper, cut into 1/2-inch pieces (about 1 1/2 cups)
- 8 ounces ground white turkey meat, broken into small chunks (NOTE: Use 3/4 lb of hot italian turkey sausage - approx 3 sausages)
- 1 tablespoon herbes de Provence
- 8 cups low-sodium chicken broth, plus more as needed (NOTE: Use 2 boxes of broth)
- One 15-ounce can diced tomatoes in juice, drained
- 1 3/4 cups cooked brown rice (NOTE: Make 1 cup of uncooked rice and add to soup until you achieve the proper ratio)
- 1 small bunch kale, coarsely chopped (about 4 packed cups)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup freshly grated Parmesan, optional
Perfect Pumpkin Pie

Preheat oven to 425 degrees F
- 1 (15 ounce) can pumpkin
- 1 (14 ounce) can EAGLE BRAND® Sweetened Condensed Milk
- 2 large eggs
- 1T Pumpkin Pie Spice
- 1 /2 teaspoon salt
- 2T sugar
- 1 (9 inch) unbaked pie crust
Caramelized Butternut Squash

Preheat the oven to 400 degrees F
- 2 medium butternut squash (4 to 5 pounds total)
- 6 tablespoons unsalted butter, melted
- 1/4 cup light brown sugar, packed
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper

Parmesan-Crusted Pork Chops

- 2 large eggs
- 1 cup dried Italian-style bread crumbs
- 3/4 cups freshly grated Parmesan
- 4 (1/2 to 3/4-inch thick) center-cut pork loin chops (each about 10 to 12 ounces)
- Salt and freshly ground black pepper
- 6 tablespoons olive oil
- Lemon wedges, for serving
Madej's Pumpkin Bread

1. Put all ingredients into a large bowl and mix together with a beater
- 1 3/4 cups flour
- 1 tsp baking soda
- 3/4 tsp salt
- 1/2 tsp nutmeg (1/4 tsp if using freshly ground nutmeg)
- 1/2 tsp cinnamon
- 1 1/2 cups sugar
- 1/2 cup cooking oil
- 2 eggs
- 1/3 cup water
- 1 cup pumpkin

- 1 pound Bob Evans® Zesty Hot Sausage Roll
- 1 (16 ounce) package VELVEETA® Pasteurized Prepared Cheese Product, cut up NOTE: Use light version
- 1 (10 ounce) can diced tomatoes with green chilies, undrained - Ro*Tel Brand
- or 1 (16 ounce) jar of salsa
- 2 - 3 spicy peppers, chopped with seeds
- NOTE: Try replacing sausage with chorizo or hot andouille sausage
