Crab Lemon Butter Sauce for Fish

Put shallot, white wine and lemon juice in a small saucepan
- 1 large chopped shallot
- 1/8 cup white wine
- 1 1/2 tablespoons lemon juice
- 1/3 cup whipping cream
- 8 tablespoons unsalted butter, very cold, cut in pieces
- 1 1/2 cups jumbo lump crabmeat

- 1 stalk lemongrass OR zest of 1/2 lemon
- 3 Tbsp vegetable oil, divided
- 1 Tbsp peeled and grated fresh ginger
