Hot Pressed Reuben

Preheat a large skillet over medium heat
- 4 tablespoons unsalted butter, at room temperature
- 8 slices marbled rye bread
- 8 slices Swiss
- 12 ounces deli-sliced corned beef
- 1/2 cup drained sauerkraut
- 4 tablespoons Kicked-Up Russian Dressing, recipe follows
- 10 slices pickles, for serving
- 1/2 cup mayonnaise
- 2 tablespoons chili sauce, such as Heinz
- 2 teaspoons prepared horseradish
- 2 teaspoons chopped pickled relish
Italian Herbed Sausage Bread

Heat oven to 325 degrees. Heat 1 Tbs olive oil in pan and cook sausage breaking into small pieces
- 1 lb package pizza dough - defrosted
- 3 Tbsp olive oil
- 3/4 lb Italian sausage
- 1 egg beaten
- 1/4 tsp ground cloves
- 1/4 tsp allspice
- 1/4 tsp sage
- salt and pepper
- 1 1/4 cups mozzarella - coarsely grated
- 1/4 cup flour
- 6 Tsp grated parmesan
Beef Moussaka

For the eggplant and meat sauce: Preheat the oven to 450 degrees F
- Eggplant and Meat Sauce:
- 2 medium eggplants, cut into 3/4-inch-thick rounds
- 1/3 cup plus 2 tablespoons olive oil
- Kosher salt and freshly ground black pepper
- 1 pound ground beef (85 to 90 percent lean)
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1 tablespoon tomato paste
- 1/2 cup dry white wine
- One 28-ounce can crushed tomatoes in juice
- 1 tablespoon chopped fresh oregano
- Bechamel:
- 4 tablespoons unsalted butter
- 1/3 cup all-purpose flour
- 1 3/4 cups whole milk
- 2 ounces goat cheese
- 1 cup grated Parmesan
- Kosher salt and freshly ground black pepper
- 2 large egg yolks
- 1/4 cup chopped fresh parsley
Muffin Tin Cheesesteaks

Preheat the oven to 375 degrees F
- Nonstick cooking spray, for spraying the muffin tin
- 1 pound pizza dough in a can
- 8 slices sharp provolone cheese
- 1 pound thinly sliced rare roast beef, such as Boar's Head
- Caramelized Onions, recipe follows
- Sliced pickled banana peppers, for topping
- 1 tablespoon vegetable oil
- 1 yellow onion, sliced thin
- Salt and freshly ground black pepper

Preheat oven to 400°F (200°C)
- 2 2 2 avocados, ripe
- 1/2 1/2 1/2 white onion, finely chopped
- 1/2 1/2 1/2 tomato, chopped
- 2 2 2 tablespoons cilantro, chopped
- 1/2 1/2 1/2 tablespoon kosher salt
- 2 2 2 tablespoons lime juice, freshly squeezed
- 4 4 4 boneless, skinless chicken breasts
- to salt, to taste
- to pepper, freshly ground, to taste
- 8 8 8 strips bacon
- 1 1 1 tablespoon canola oil
- to 400°F to 400°F (200°C).
- to a knife, cut around the pit of the avocado, separating the halves from each other. Remove the pit and use a spoon to scoop out the avocado.
- In a large bowl, combine the avocado, onion, tomato, cilantro, salt, and lime juice. Mash and stir with a fork until there are no large chunks of avocado left.
- Season chicken breasts with salt and pepper on all sides. Slice chicken breasts in half crosswise.
- to a slit into the center of each half to make a pocket. Take a heaping spoonful of the guacamole and pack it into the pocket. Pinch the edges of the chicken closed.
- Wrap the chicken with two strips of bacon, making sure the ends of the bacon all end up on the same side of the chicken.
- to to in a pan over high heat. Sear the bacon-wrapped chicken for two to three minutes on each side. Remember to cook the sides of the chicken as well.
- 10 for 10 minutes and then serve.

Thai Beef with Peppers

Cook the noodles according to the package directions
- 1 package pad Thai rice noodles or linguine
- 1/2 cup low-sodium soy sauce
- 3 tablespoons sherry
- 2 tablespoons cornstarch
- 2 tablespoons packed brown sugar
- 1 tablespoon minced fresh ginger
- 1 teaspoon red chili paste or a few dashes red chili oil
- 2 cloves garlic, minced
- 1 lime, halved
- 1 pound flank steak, sliced very thin against the grain
- 2 tablespoons vegetable oil
- 1 medium yellow onion, sliced
- 1 red bell pepper, cored and sliced into rings
- 1 tablespoon diced fresh jalapeno or 1 teaspoon diced hot pepper
- Fresh basil leaves, for garnish
- Fresh cilantro leaves, for garnish
Grilled Lamb Meatball Flatbread with Grilled Tomato Sauce

- 1/2 cup breadcrumbs
- 1/2 small onion, very finely diced
- 3 tablespoons milk
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon cayenne

- 1 pound ground lamb
- 1 large egg
- 2 tablespoons finely chopped fresh cilantro
- 2 tablespoons finely chopped fresh parsley

Fill a medium pot halfway with water and bring to a rolling boil
- 16 baby red potatoes, quartered
- Four 7-ounce mahi-mahi fillets
- 2 to 3 tablespoons blackening spice
- 16 to 20 jumbo shrimp
- 4 ounces jumbo lump crabmeat
- 1/2 cup Chablis wine
- 1/2 cup Worcestershire sauce
- 1/4 cup fresh lemon juice
- 2 1/2 tablespoons minced garlic
- 2 1/2 tablespoons Creole spice
- 1/4 cup heavy cream
- 3 sticks unsalted butter, 2 sticks cubed, 1 stick melted
- 4 cups oil, for frying
