Amaretto-Cranberry Kiss

- 2 cups cranberry juice cocktail
- 1 cup vodka
- 1/2 cup amaretto
- 3 tablespoons fresh orange juice
- Ice cubes
- Clementines, peeled, separated into segments
Beef Stew

Place the beef in a bowl with red wine, garlic, and bay leaves
- 2 1/2 pounds good quality chuck beef, cut into 1 1/2-inch cubes
- 1 (750-ml bottle) good red wine
- 3 whole garlic cloves, smashed
- 3 bay leaves
- 2 cups all-purpose flour
- Kosher salt
- Freshly ground black pepper
- Good olive oil
- 2 yellow onions, cut into 1-inch cubes
- 1 pound carrots, peeled and cut diagonally in 1 1/2-inch chunks
- 1/2 pound white mushrooms, stems discarded and cut in 1/2
- 1 pound small potatoes, halved or quartered
- 1 tablespoon minced garlic (3 cloves)
- 2 cups or 1 (14 1/2-ounce can) chicken stock or broth
- 1 large (or 2 small) branch fresh rosemary
- 1/2 cup chopped sun-dried tomatoes
- 2 tablespoons Worcestershire sauce
- 1 (10-ounce) package frozen peas
Summer Corn and Shrimp Succotash

1. Peel and devein shrimp, reserving shells
- 3/4 pound jumbo shrimp
- 2 tablespoons olive oil, divided
- 1 cup unsalted chicken stock
- 8 cups water
- 3 cups shelled fava beans (about 4 1/2 pounds unshelled beans)
- 1 cup (1-inch) diagonally cut green beans (about 1/4 pound)
- 2 tablespoons butter, divided
- 3 garlic cloves, minced
- 2 shallots, minced
- 1 1/2 cups fresh corn kernels (about 3 ears)
- 1/2 teaspoon kosher salt
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh tarragon
- 1/2 teaspoon hot sauce
- 2 tablespoons reduced-fat sour cream
- 1/2 teaspoon freshly ground black pepper
Southern Corn Pudding

- 1 Tbsp butter, unsalted, softned
- 1 onion, diced
- 1 Tbsp unbleached all purpose flour
- 3 cups sweet corn, thawed
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 3 eggs, lightly beaten
- 1 cup milk
Cheese Flan

Special equipment: six 3/4- to 1-cup ramekins Preheat the oven to 350 degrees F
- 1 cup sugar
- One 8-ounce package cream cheese, at room temperature
- One 14-ounce can sweetened condensed milk
- 1 1/2 cups milk
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla
- Pinch salt
- 5 large eggs
- 1 cup mixed berries (blueberries, raspberries, blackberries), for garnish
Goat Cheese and Sun Dried Tomato Profiteroles with Herb Oil

For the Profiteroles: Preheat the oven to 350 degrees F
- 1/2 cup water
- 1/4 cup unsalted butter, cut into pieces
- Pinch salt
- 1/2 cup all-purpose flour
- 3 large eggs
- 3 tablespoons grated Parmesan
- Pinch freshly ground black pepper
- 8 ounces goat cheese, room temperature
- 1/4 cup cream
- 1/2 cup diced sun dried tomatoes
- Pinch salt and freshly ground black pepper
- 3/4 cup fresh mint leaves
- 3/4 cup fresh basil leaves
- 1 cup olive oil
- Pinch salt
- Freshly ground black pepper
- 1 cup chopped toasted walnuts, for garnish

- 1 box Betty Crocker™ SuperMoist™ German chocolate cake mix
- Water, vegetable oil and eggs called for on cake mix box
- 1 bottle (1 oz) red food color
- 1 tablespoon unsweetened baking cocoa
- 1 cup Betty Crocker™ Rich & Creamy cream cheese frosting (from 1-lb container)
- 3 bags (14 oz each) white or green candy melts or coating wafers
- Betty Crocker™ red sugar

- SALT TO TASTE

- 1 TABLESPOON ORANGE JUICE
