Crunchy Summer Salad

Step 1 Combine cucumbers, corn, and sugar snaps in a bowl
- 2 Kirby cucumbers, unpeeled and thinly sliced (about 2 cups)
- 1 1/2 cups fresh corn kernels (from 2 ears)
- 9 ounces sugar snap peas, trimmed (2 3/4 cups)
- 2 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- Coarse salt and freshly ground pepper
- 2 firm-ripe avocados, halved and cut into wedges
Raspberry Ribbon Slices

1 Make cookie dough as directed on package for drop cookies, adding flour; blend
- 1 pouch Betty Crocker® sugar cookie mix
- Butter and egg called for on cookie mix pouch as directed for drop cookies
- 3 tablespoons Gold Medal® all-purpose flour
- 3 tablespoons seedless raspberry, apricot or your favorite jam
- 3/4 cup powdered sugar
- 2 to 3 teaspoons milk
Bread Pudding with Run Sauce

Heat oven to 350 degrees. In a large bowl beat eggs with electric mixer until fluffy
- 3 large eggs
- 1 1/2 cups sugar
- 2 tablespoons vanilla
- 1 teaspoon nutmeg
- 1 1/2 teaspoons cinnamon
- 4 tablespoons melted unsalted butter
- 3 cups milk
- 3/4 cup golden raisins
- 3/4 cup shredded coconut - optional
- 1/2 cup toasted chopped pecans
- 1 pound french bread cut into cubes
- 3 tablespoons softened butter unsalted

- 1 cup softened butter
- 1/2 cup dark rum

Roasted Rosemary and Thyme Chicken, Carrots and Potatoes

Preheat the oven to 450 degrees F
- 1 lemon, cut into slices
- 1 whole chicken, skin on, cut into parts
- Olive oil, for drizzling
- Kosher salt and coarsely ground black pepper
- 2 to 3 shakes hot Hungarian paprika
- 1 pound small potatoes, any larger ones halved
- 4 carrots, sliced in half lengthwise
- 20 or so fresh thyme sprigs
- 2 to 3 fresh rosemary sprigs

Step 1 Combine all ingredients except shrimp in a large resealable plastic bag
- 3 tablespoons chopped fresh cilantro leaves
- 3 tablespoons chopped fresh flat-leaf parsley leaves
- 1 tablespoon minced jalapeno chile (from 1/2 jalapeno)
- 1 tablespoon minced garlic (from about 3 cloves)
- 1 tablespoon grated fresh lemon zest
- 1/3 cup extra-virgin olive oil
- 1 pound jumbo shrimp, in shells (about 20)
